糖青 ~ Golden syrup for mooncake



 
这个糖青是21/8煮好的。下个周末就可以做月饼啦!很期待哦。。。
 


食谱取自:Kathrine Kwa


材料:
1Kg 白糖
750ml
4片柠檬片
 
做法
1.全部材料放入锅里,开火煮至糖溶。
2.滚了之后,关小火继续煮。
3.大概1个半小时至2个小时,已煮成金黄色。
4.将一饭碗装满水。将一汤匙糖浆滴进水里。糖浆没有散开,手指可以触摸到软软的糖,就可以了。
5.冷却之后,装瓶。收在厨柜 不能收冰箱哦!)
 
煮好的糖青:
~至少休息2个星期才能用,最好放上一年才用。
~1Kg煮出来有1350左右
~ 像蜜糖有流动性的
~ 煮糖青时不要搅拌

                                          ~ 手指可以触摸到软软的糖 ~

Mcqueen 蛋糕 ~ Mcqueen birthday cake , My 1st 3D cake !

 

今天和明天是我家二宝和三宝的生日哦.本来要做3D  Minion 蛋糕给你们的,但是妈咪的功夫还不到家,所以最后一分钟选做了这个汽车蛋糕。 在这里妈妈祝你们永远健康快乐,平安长大,要听话哦!

好了,废话少说。来看看制作过程吧!
我做的这个原味海绵蛋糕是9寸的。(海绵蛋糕的食谱迟点补上)。馅料是罐装水蜜桃。

 
 
 
1。海绵蛋糕左右两侧约3cm的宽度切开
 
 
                                         
 
2。把切割出来的两侧蛋糕叠上去上面
 
 

 
3。用刀稍微修饰成汽车的外形,底部的蛋糕体可以再分割成3

                                                                            ~ 后~

 
4。底部放第一片蛋糕体,然后抹上打发的鲜奶油,放入已切丁的水蜜桃。再覆盖上适量的鲜奶油,盖上第二片蛋糕体,抹上鲜奶油和放入水蜜桃丁,再盖上第三片蛋糕体,重复弄完。


 
5。接着就是把整个蛋糕涂抹上鲜奶油,不是很平滑也没关系,因为等下还要挤花

葱油饼 ~ Chinese style spring onion pancake


 



食谱取自 : Kathrine Kwa

葱油饼

材料:
250g普通面粉
170g滚水
100g青葱
1小匙
胡椒粉适量

 
做法

1.把滚水倒入面粉里,一边用筷子拌匀,然后用手搓成三光面团,休息半个小时。

2.青葱切成粒,加盐和少许胡椒粉拌匀。

3.面团分成6等份,取一小面团 。再倒少许油,抹均匀在面皮上。

4.撒上青葱粒。用刀轻轻割下两刀(不要割断)。旋转面团,再卷成螺状,再压扁。

 
5.平底镬里热少许油, 放入压成薄片面团,煎至两面金黄色即可.

 
Spring onion pancake

Ingredients :
Flour 250g
Hot boiled water 170g
Spring onion 100g , chopped
Salt 1 teaspoon
Pepper

 
Method :

1. Pour hot boiled water into flour , use chopstick to mix it . Then use hand to make a dough . Rest for 30 minutes .

2. Add in salt and pepper into chopped spring onion . Mix well .

3. Divide the dough into 6 portion . Take 1 portion , roll into thin slices and pour some oil on it , wipe evenly on the dough .

4. Sprinkle some spring onion and lightly roll the dough . Use a knife to cut 2 horizontal line at the surface (do not cut through !). Rotate the dough, then rolled into a spiral shape, and then squashed.

5. Heat oil , fry both side until golden brown .

越南蛋饼 ~ Vietnamese style pancake and lettuce wraps ( Banh Xeo )

越南蛋饼

材料:
面糊
粘米粉 1/2
玉米粉  1/4
黄姜粉  ½茶匙
   1/2茶匙
鱼露  1  1/2茶匙
椰浆  1
2

 
中虾 200g , 去壳和肠泥
红箩卜 1条,切丝
1瓣蒜头,切碎
蘑菇 100g , 切片
芽菜  1/2
莞茜 / 香菜   ¼
青葱  2 ,切段
酱油  1茶匙
食油
生菜适量

 
做法

1。烧热油,炒香红箩卜丝。加入蘑菇,蒜米和酱油。翻炒一分钟,然后加入虾和青葱。待虾半熟,加入芽菜和莞茜 / 香菜 。分成4分。

2。面糊 : 粘米粉 ,玉米粉,黄姜粉和糖搅拌均匀。在另一个碗里,蛋,椰浆和鱼露搅拌均匀。倒入面糊里。

3。烧热1汤匙油,倒入半杯面糊(这食谱的分量可做4片).以中火煎至熟。加入1分的(1),加盖煮1分钟。

4。蛋饼对折,上碟。

5 可配生采和 nuoc cham 享用。

VIETNAMESE STYLE PANCAKE AND LETTUCE WRAPS

Ingredients: 

Batter :
1/2 cup / 125ml rice flour
1/4 cup corn flour
1/2 tsp. turmeric
1/2 tsp. sugar
1 1/2 tsp fish sauce
1 cup coconut milk
2 eggs, lightly beaten

 
200 g ,  peeled medium prawns
1 medium carrot, shredded finely
1 clove of garlic, crushed
100 g button mushrooms, halved then sliced
1/2 cup beansprouts, trimmed
1/4 cup coriander leaves
2 spring onions, cut into rounds
1 tsp. light soy sauce
cooking oil
lettuce leaves

 
Method:

1.First saute the shredded carrots in 2 tbsps. of oil. Add the mushrooms, garlic and light soy sauce. Stir fry for a minute before adding the prawns and spring onions. When the prawns turn pink, add the beansprouts and coriander leaves and transfer to a dish. Divide the filling into four portions.

 
2.Prepare the pancakes.   For the pancakes, combine the rice and corn flour, turmeric and sugar. Combine eggs, coconut milk and fish sauce then gradually stir into the flour mixture to make a smooth batter.

3.Heat 1 tbsp. of oil, and pour in 1/2 cup of the batter (this recipe makes 4 pancakes). Cook on medium heat. When the pancake is nearly done (the underside should be crisp and the top should be nearly set all over), spread one portion of the filling onto the pancake. Cook for one minute, covered.

4.Fold the pancake in half and transfer to a serving dish. Repeat with the rest of the pancakes.

5. Serve with lettuce leaves and nuoc cham .

芒果优酪冰沙 ~ Mango frozen yogurt




 
 
芒果优酪冰沙


材料 :
芒果  2
1 / 250ml 原味优酪
1/2 / 125ml 鲜奶
5 汤匙
3汤匙 蜜糖
一撮盐

 
做法

1.将全部材料(A)放进搅拌机里打至幼滑。

2.倒入容器,放入冰格里,每隔1小时用叉搅拌几下再放回冰箱,重复3~ 4次,目的是为了防止它产生很多冰碴

 

 
 

Mango Frozen Yogurt

Ingredients :
2 mangoes , peeled and diced
1 cup / 250ml  yogurt
1/2 cp / 125ml  fresh milk
5  tablespoon sugar
3 tablespoon honey
A pinch of salt ( optional )

 
Method :

1. Place all ingredients in a blender and blend until smooth .

2. Place the mango yogurt mixture in the freezer , cover it . After one hour bring it out from freezer and  whack it with fork or mixer .Repeat this step 3 ~ 4 times  .
