我的生日蛋糕之2 :蓝色珊瑚礁蛋糕 ~ Blue Lagoon cheesecake






 
食谱取自 完美芝士

蓝色珊瑚礁蛋糕

兰花蛋糕 :
鸡蛋  2
细砂糖  60g
普通面粉  80g
溶化牛油  50g
兰花汁  1大匙 蓝色素适量

 
芝士馅料:
奶油芝士 150g
细砂糖  50g
蛋黄  2
柠檬汽水 100ml
鱼胶粉   1小匙
清水  1大匙
淡味奶油(打起) 150g
蓝橙酒  2大匙
柠檬汁  2大匙

 
做法

1 蛋糕 将鸡蛋和砂糖打至松白,加入兰花汁,轻轻拌入过的面粉,再加入溶化牛油,轻轻拌匀。

2.把面糊到入铺上油纸的18公分(7寸)烤盘,盛入预热烤箱以180度烘约 15 ~ 20分钟。待冷却,切成两片。

3.以同样的份量和做法烤一个香草蛋糕。

4.芝士馅料:将奶油芝士和砂糖搅拌至软滑,加入蛋黄,拌匀,再加入柠檬汽水,搅拌均匀。

5 鱼胶坟和清水隔着  水煮溶,加入芝士中,拌匀,再拌入淡味奶油,蓝橙酒和柠檬汁,搅拌均匀。

6 将一片兰花蛋糕铺在烤盘里,倒入1/4馅料,盖上香草蛋糕,再倒入1/4馅料;继续层叠直到完成。用保鲜膜包好,存入冰箱冷藏至硬。

7.取出蛋糕,加上装饰即可。

Blue lagoon cheesecake

Clitoria cake :
3 eggs
caster sugar  60g
plain flour 80g
melted butter 80g
clitoria juice   1tbsp or blue colouring ( few drops )

 
Cheese filling :
cream cheese 150g
caster sugar  50g
egg yolks  2 nos
lemonade 100ml
gelatin powder 1tsp
water  1tbsp
whipping cream ( whipped ) 150g
Blue Curacao  2 tbsp
lemon juice  2tbsp

Method :

1. To make clitoria cake : whisk eggsand sugar until light and fluffy. Stir in clitoria juice , then fold in sifted flour. Add in melted butter , mix until well combined .

2. Spread batter into a lined 18cm ( 7” ) baking tin . Bake in preheated oven at 180c for 15 ~ 20 minutes  . When cool , split into 2 layers .

3. To make vanilla sponge , same as clitoria cake ingredients and method .

4. To make cheese filling : beat cream cheese and sugar until soft and smooth . Add in egg yolks , mix well . Then add in lemonade , mix until well combined .

5. Melt the gelatin powder with water over double boil . Stir into cheese mixture , then fold in whipped cream , Blue Curacao and lemon juice , mix well .

6. To assemble , line a clitoria cake into baking tin , spread with  1/4 of cheese filling . Continue layering until finished . Wrap and keep in freezer until set .

7. Remove cake . decorate as desired  .

青咖喱鸡 ~ Thai green curry chicken ( Gaeng Keow Wan Gai )


 
 
~ 小茄子/泰国茄子 , 疯柑 ,迷你茄子 ~

青咖喱酱

材料:
青辣椒  15
小葱头   3 切片)
蒜头  9 (去皮)
南姜   2茶匙 (切细片)
香茅  2汤匙 切片)
疯柑皮   1茶匙 切细片)
芫茜根   2 切碎
胡椒粒   5 我用胡椒粉
  1茶匙
虾酱  1茶匙 我用马来栈

 
做法

1.把胡椒粒放入石臼内剖碎,加入辣椒和盐,搅匀。

2 加入其余材料( 除了虾酱),一起剖烂。

3.最后加入虾酱,继续剖至全部材料变幼和混合均匀即可。

 
** 我用搅拌机搅至幼和滑。

Green curry paste

Ingredients :
15 large green chillis 
3 shallot   ( sliced )
peeled garlic  9 cloves
finely sliced galangal  2 tsp
sliced lemongrass  2tbsp
finely sliced kaffir lime rind  1 tsp
2 stems coriander root ( chopped )
5 peppercorn ( I used pepper )
salt  1tsp
shrimp paste  1tsp ( I used belacan )

 
Method :

1.  Finely pound peppercorns in a mortar , add hot chillies and salt . Blend well .

2. Add remaining ingredients except shrimp paste. Pound until well mixed .

3. Add shrimp paste , continue pounding until smooth and fine .

 
** I used mixer to blend all ingredients .

                              





 
 
青咖喱鸡
 
材料:
鸡胸肉或鸡腿   400g ( 去骨,切薄片)
青咖喱酱    3汤匙
椰浆      2 1/2
小茄子/泰国茄子   1杯(切 1/4
迷你茄子    1/3
泰国红辣椒    23条( 切片) 我没放
疯柑叶   2片(撕碎)
甜九层塔    1/2
鱼露   2汤匙
椰糖   1茶匙
 
做法
1.把1/2杯椰浆入炒锅,以中火煮沸。加入青咖喱酱,拌匀,煮至香。
2.转小火,慢慢再加入1杯椰浆,搅拌至有一层青油浮在上面。
3.加入鸡肉和疯柑叶,继续以中火煮3分钟至香,以及鸡肉熟透。
4.加入其余椰浆和全部茄子,煮至熟。 加入糖和鱼露调味最后加入甜九层塔和辣椒。熄火即可。
 
Thai Green curry chicken ( Keang Keaw Waan Gai )
Ingredients :
chicken breast or thigh  400g ( deboned and thinly sliced )
green curry paste   2tbsp
coconut milk   2  1/2cups
small eggplants / Thai eggplants    1cup ( cut into quarters )
miniature eggplant / pea eggplant    1/3cup
red chillies  2 to 3 ( sliced diagnolly )
kaffir lime leaf  2 pieces ( torn )
sweet basil leaf   1/2cup
fish sauce   2tbsp
palm sugar  1tsp
 
Method :
 
1. Place  1/2 cup of coconut milk in the wok over medium heat , let it boils.Add green curry paste and stir well until fragrant .
2. Reduce heat , gradually add 1 cup of the coconut milk , a few drops at a time , stir until a film of green oil surfaces .
3. Add the chicken and kaffir lime leaves , continue cooking for 3 minutes until fragrant and the chicken is cooked through .
4. Add the remaining coconut milk and eggplants .Cook until the eggplants are done . Add in fish sauce and palm sugar , sprinkle sweet basil leaves and red chillies over . Turn off heat , serve with white rice .

燕麦豆腐丸 ~ Oats tofu balls

燕麦豆腐丸

材料:
豆腐 2
燕麦(老人燕麦也可)10汤匙
木薯粉 3汤匙
炸油 1

调味料:
盐(少许)
胡椒粉(少许)

 
做法:

1. 先将豆腐用叉子搓烂。然后加入燕麦,再加入适量的调味料搅拌均匀成团状。

2. 用汤匙舀出适合的大小,表层沾上少许的木薯粉。

3. 锅加热后,加了油烧热后,把燕麦豆腐丸放入炸至有点金黄色即可捞起。把油滤干.

 
酸甜番茄淋酱

材料:
大洋葱 1个(切片)
黄瓜 半个(去种籽,切片)
黄梨 适量(切丁)( 我没放
番茄 1个(切块)

 
酱料:
罐装番茄酱 5汤匙
酸梅酱 2汤匙
清水(适量)

调味料
黄砂糖、盐(各少许、适量即可)

做法:

1.把锅加热后,加点油,把菜类倒入拌炒一会儿。可以加一点点糖。** 加了少许的糖拌炒,然后加入酸的酱料一起煮,那么黄瓜,大葱口感比较脆,不会软软的 **

2.倒入酱料和调味料煮炒拌,加入适量的清水煮滚即可。

3.把酱汁淋在燕麦豆腐丸上就可上桌享用了。

Oats tofu balls

Ingredients :
soft beancurd / tofu 2 pieces
oats 10tbsp
tapioca flour 3tbsp
oil for frying 1 cup

Seasoning :
salt
pepper

 
Method :

1. Mash soft beancurd with a fork . Add in oats and seasoning . Mix well .

2. Use spoon scoop out the mashed beancurd and coated with some tapioca flour .

3. Heat oil , fry until golden brown . Dish up and drain excess oil .

 

Sweet and sour tomato sauce

Ingredients :
1 onion ( sliced )
cucumber  1/2 ( remove seed and sliced )  
some pineapple  ( cubed )
1 tomato ( cubed )

Sauce :
tomato sauce 5tbsp
sour plum sauce  2tbsp
water

 
Seasoning  :
brown sugar
salt

 
Method :

1. Heat oil , add in cucumber , pineapple , onion and tomato . May add some sugar if you want the cucumber and onion more crispy .

2. Add in sauce ingredients , seasoning and water . Bring to boil .

3. Pour the sauce over fried tofu balls and serve hot .
