中式薄饼 ~ Chinese Popiah

 




 
食谱取自 Guai Shu Shu
春卷皮/薄饼皮
材料 :
160g 高筋面粉
250g
食盐一撮
1汤匙 食油
做法:
1.全部材料(除了食油)混合拌均匀至无颗粒。
2.面粉团用湿布盖好,静置60分钟 1

3.平底锅预热,用纸沾点油擦拭锅心。然后用刷子沾面煳,刷入平底锅成圆型。 2

4.熟后, 用手揭下即可。

Popiah skin
 
Ingredients :
160g high protein flour or bread flour
250g plain water
a pinch of salt
1tbsp cooking oil
Method :
1. Mix all the ingredients together , stir until it is free of lumps .
2. Cover with a piece of wet towel or cling wrap and let it rest for about 1 hour to enhance the stretch ability. ( Picture 1 )
 
3. Heat up a flat non-stick frying pan until it is warm , lightly grease the pan with an oiled tissue paper. Brush the entire pan until it is fully covered with the batter.  ( Picture 2 )
4. Once the batter sets (means not sticky) and the sides curls up, use the hand to take out the crepe.
 
中式薄饼
材料:
炒香的沙葛丝  **
蛋皮 切丝
芽菜  灼熟
炸葱酥
花生碎
甜酱
辣椒酱
生菜 洗净,切小段)
** 1粒沙葛( 切丝 ),蒜茸,黑酱油,生抽,麻油,蚝油,绍兴酒和水适量。做法 :锅里烧热油,爆香蒜茸。倒入沙葛丝和全部调味料。以大火拌炒均匀。加入水,以中小火焖至软和入味,即可。
做法 :
1. 取一片春卷皮/薄饼皮,涂上少许甜酱和辣椒酱。 依序铺上沙葛丝,蛋皮,芽菜,炸葱酥,花生碎和生菜。卷起,即可切块享用。 3

Chinese Popiah
Ingredients :
cook shredded yam bean  **
omelette ( shredded )
beansprout ( blanched )
fried crispy shallots
chopped peanut
sweet sauce
chilli sauce
leafy green vegetables ( cut into section )
 
** 1 yam bean / jicama ( shredded ) , chopped garlic , dark soy sauce , soy sauce , sesame oil , oyster sauce , chinese wine and water .  Method : Heat up oil in a wok , sauté chopped garlic .Then add in shredded yam bean / jicama and seasoning . Continue to stir and cook until soft . Set aside .
To serve :
1. Spread some sweet sauce and chilli sauce onto a popiah skin . Put in some yam bean filling  , omelette , beansprout , fried crispy shallots , peanuts and top with some vegetable . Roll it up , cut into pieces and serve . ( Picture 3 )

香醇甜肉丸 ~ Sweet & Sour Meatballs

 



 
食谱取自:新新饮食,第92

香醇甜肉丸
 
材料A :
400g 肉碎
1大匙 红萝卜碎
1 青葱 切粒)
1大匙 粟粉
1/2小匙
1小匙 麻油
少许胡椒粉

材料B :
2大匙
1大匙 姜碎
1小匙 蒜茸

汁料(拌匀 ):
5大匙 甜黑醋
1大匙
1大匙 生抽
1小匙粟粉

做法
1.材料A放入大碗中,充分拌匀至起胶,然后做成肉丸。

2.肉丸放入热油中炸至金黄熟透,捞起沥干油分。

3.烧热油,爆香姜碎和蒜茸,加入汁料煮滚至浓稠,然后放入肉丸炒匀,即可上碟享用。

Sweet & Sour Meatballs

Ingredients A :
400g minced meat
1tbsp chopped carrot
1 stalk spring onion ( diced )
1tbsp cornstarch
1/2tsp salt
1tsp sesame oil
dash of pepper

Ingredients B :
2tbsp oil
1tbsp chopped ginger
1tsp chopped garlic

Sauce (mixed ) :
5tbsp sweetened dark vinegar
1tbsp sugar
1tbsp light soy sauce
1tsp cornstarch

Method :
1. In a mixing bowl , combine all ingredients A and stir until very sticky . Form into meatballs .

2. Deep-fry meatballs in hot oil till golden brown . Dish and drain .

3. Heat up oil , sauté chopped ginger and garlic until aromatic . Add in the sauce and bring to boil till thick . Add in fried meatballs and stir-fry until well mixed . Dish up and serve .

菠萝甜酸豆腐 ~ Sweet & Sour Pineapple Beancurd

菠萝甜酸豆腐
 
材料:
2 四方白豆腐 (切块
150g  菠萝  (切块
/红甜椒适量 切滚刀
1 红辣椒 (( 切滚刀
半粒 洋葱 切块

白豆腐沾炸粉
30g 粘米粉

调味料:
5汤匙  番茄酱
1/2茶匙
1茶匙 生抽
1茶匙 米酒
白醋适量
水适量

做法
1. 豆腐切成块状后沾入粘米粉。热油锅将豆腐炸至金黄色。取出,沥干油份。

2. 锅里烧热食油炒香洋葱后,将其余材料和所有调味料一同倒入转大火速拌炒。

3. 最后将炸豆腐倒入拌均匀至沾满酱汁即可。

Sweet & Sour Pineapple Beancurd

Ingredients :
2pcs square white beancurd  ( cut into squares )
150g pineapples ( cut into pieces )
green / red capsicum ( cut into pieces )
1/2  onion ( cut into pieces )

For coating  :
30g rice flour

Seasoning :
5tbsp tomato sauce
1/2tsp sugar
1tsp light soy sauce
1tsp rice wine
vinegar
water

Method :
1. Cut beancurd into squares , coat with rice flour . Heat up oil , deep fry beancurd till golden brown , dish up and drain well .
 
2. Heat oil in wok , fry onion till fragrant , add in other ingredients and seasoning , stir fry at high heat .

3. Add in beancurd , stir well until beancurd is fully coated with sauce .
