虾酱骨 ~ Deep-fried Shrimp Paste Ribs





食谱取自 : 好好吃!大排档菜

虾酱骨

材料 :
600g 排骨 ( 斩块 )
3 炸油

腌料 :
1大匙 虾酱
1 南乳
½大匙
½
1大匙 面粉
1大匙 粟粉

做法 :
1. 排骨加入腌料拌匀,腌3小时或隔夜。

2. 烧热油,放入排骨炸至金黄色,捞起沥干油分,趁热享用。

Deep-fried Shrimp Paste Ribs

Ingredients :
600g spare ribs ( cut into pieces )
3 cups oil for deep-frying

Marinade :
1tbsp shrimp paste
1 cube fermented red bean curd
½ tbsp sugar
½ egg
1tbsp plain flour
1tbsp corn flour

Method :
1. Combine spare ribs with marinade and marinate for 3 hours or overnight .

2. Heat up oil for deep-frying , deep-fry spare ribs until golden brown . Dish and drain . Serve .

招牌蜜汁烤鸡腿 ~ Signature Roasted Honey Chicken

招牌蜜汁烤鸡腿

材料 :
3 全鸡腿
1 洋葱 ( 去皮 ,切丝 )
2 红辣椒 ( 去籽 切丝 )

腌料 :
1小匙 生抽
1小匙
½小匙 五香粉
1大匙 麻油
½大匙 蜂蜜

汁料 ( 拌匀 ) :
2大匙 番茄酱
1大匙 辣椒酱
1大匙 生抽
2大匙
2小匙

做法 :
1. 鸡腿加入腌料拌匀,腌3小时。汁料加入洋葱和红辣椒拌匀。

2. 预热烤箱至200c ,放入鸡烤30分钟。

3. 将汁料涂上 ,继续烤15分钟。

4. 取出斩块,便可享用。

Signature Roasted Honey Chicken

Ingredients :
3 chicken whole legs
1 onions ( peeled and shredded )
2 red chillies ( seeded and shredded )

Marinade :
1tsp light soy sauce
1tsp salt
½tsp five spice powder
1tbsp sesame oil
½tbsp honey

Sauce ( mixed ) :
2tbsp tomato sauce
1tbsp chilli sauce
1tbsp light soy sauce
2tbsp water
1tsp sugar

Method :
1. Combine chicken with marinade and marinate for 3 hours . Meanwhile , mix the sauce with onions and red chillis .

2. Preheat oven to 200c , roast the marinated chicken for 30 minutes .

3. Remove and spread the sauce mixture onto the chicken and roast for further 15 minutes .

4. Remove and cut into pieces . Serve .

香辣黄金蛋 ~ Golden Eggs with Mixed Herbs Gravy

香辣黄金蛋
 
材料 :
10 鸡蛋 ( 煮熟,去壳 )
6 番茄 ( 切块 )
4 青辣椒 ( 去籽,切片 )
 
香料 A ( 打烂 ) :
2大匙
250g  葱头仔
80g  蒜头
5 红辣椒
 
香料 B :
2小匙 黄姜粉
2小匙 辣椒粉
 
调味料 :
400ml
2大匙 鱼露
1大匙
 
做法 :
1. 将香料(A)放入锅里,拌炒至出油或香。
 
2. 加入香料(B)和调味料拌煮至滚,加入鸡蛋,番茄和青辣椒煮滚。
 
3. 即可盛起享用。

Ingredients :
10 eggs ( boiled and shelled )
6 tomatoes ( cut into pieces )
4 green chillies ( seeded and sliced )
 
Spices A ( blended ) :
2tbsp oil
250g shallots
80g garlic
5 red chillies
 
Spices B :
2tsp turmeric powder
2tsp chilli powder
 
Seasoning :
400ml water
3tbsp fish sauce
1tbsp sugar
 
Method :
1. Put blended spices A into a pan , stir-fry until aromatic.
 
2. Add in spices B , seasoning and bring to boil . Add in hard-boiled eggs , tomatoes and green chillies and bring to boil .
 
3. Dish up and serve .

三层肉佐香辣蒜茸醋 ~ Pork Belly with Chilli Garlic Sauce

三层肉佐香辣蒜茸醋

材料 :
500g  三层肉 / 花肉

卤水 :
1公升
2大匙
1小块 ( 拍扁 )
1 青葱

沾酱 :
5 红辣椒
4 指天椒
8 蒜米
50g 嫩姜
80ml 白米醋
4大匙

做法 :
1. 将全部酱料一起打烂即可。

2. 煮滚卤水,放入三层肉用 小火煮30分钟或熟透,捞起过冷河,切片沾酱料即可享用。

Pork Belly with Chilli Garlic Sauce

Ingredients
500g pork belly

Brine :
1 litre water
2tbsp salt
1 small piece ginger ( crushed )
1 stalk spring onion

Dipping sauce :
5 red chillies
4 chilli padi
8 pips garlic
50g young ginger
80ml white rice vinegar
4tbsp sugar

Method :
1. Put all the dipping sauce ingredients into a food processor and blend till smooth .

2. Bring all brine ingredients to boil . Put in pork belly and cook at low heat for 30 minutes or till well cooked . Remove and soak in cold water . Dish up , cut pork belly into thin slices and serve with chilli garlic sauce .

苹果芦荟糖水 ~ Apple with Aloe Dessert



食谱取自 :  思念糖水

苹果芦荟糖水

材料 :
2 ( 250g )  红苹果
200g  芦荟
200g 片糖 ( 弄碎 )
1.5公升 清水

做法 :
1. 苹果洗净后切块,去核。芦荟削皮,切丁,备用。

2. 把苹果,芦荟,片糖和清水放入炖锅里,以慢火炖制1小时,即可。

Apple with Aloe Dessert

Ingredients
2 nos ( about 250g ) red apples
200g Aloe vera
200g slab sugar ( crushed )
1.5 litres water

Method :
1. Clean the apples , cut into pieces and cored . Peel aloe and cubed , set aside .

2. In a double boiler , add in apple , aloe , slab sugar and water , cover up and double boil in lidded steamer of boiling water over low heat for 1 hour . Serve .

鱼露虾酱炸鸡翼 ~ Fish Sauce and Shrimp Paste Fried ChickenWings

鱼露虾酱炸鸡翼
材料 :
9 ~ 10 鸡翼
15g  蒜瓣
20g 生姜
4大匙 薯粉

腌料 :
1大匙 咸虾酱
1大匙 泰国鱼露
1小匙

做法 :
1. 将蒜瓣和生姜捣烂,挤出姜蒜汁,备用。

2. 鸡翼加入姜蒜汁和腌料拌匀,腌渍4小时。

3. 加入薯粉拌匀,放入热油中以大火炸熟至金黄,捞起。

4. 把锅里的热油再次烧滚,将鸡翼重炸一次至酥脆,捞起,沥油,即可上桌.

Fish Sauce and Shrimp Paste Fried ChickenWings

Ingredients
9 ~ 10 nos chicken wings
15g garlic cloves
20g fresh ginger
4tbsp tapioca flour

Marinade  :
1tbsp salted shrimp paste
1tbsp Thai fish sauce
1tsp sugar

Method :
1. Pound garlic and ginger in a stone mortar become paste , squeezed and get the juice . Set aside .

2. Season chicken wings with ginger garlic juice and marinade , marinate for 4 hours .

3. Mix the marinated chicken wings with tapioca flour , deep-fry in hot oil over high heat until cooked and slightly golden brown . Dish out .

4. Reheat oil in wok , deep-fry chicken wings again till crispy . Dish out and drain , serve at once .
