简易版日式照烧鸡腿 ~ Easy Teriyaki Chicken

简易版日式照烧鸡腿

材料:
3 连皮全鸡腿( 去骨
1 市售照烧酱
1大匙 姜汁
盐和胡椒粉适量
烤香白芝麻适量

做法
1. 鸡腿用盐,胡椒粉,姜汁少许的照烧酱腌一小时。

2. 不沾锅烧热少许油 ( 可选择不放油 ),放入鸡肉,皮朝下。当皮的那一面煎至金黄色后将鸡肉翻过来,然后倒入照烧酱料和腌鸡肉的酱汁,以小火煎至酱汁收干少许( 煮的时候要不停的翻面让鸡肉均匀吸收酱汁和上色 )

3. 将鸡肉盛碟,淋上照烧酱和撒上白芝麻即可。

Easy Teriyaki Chicken

Ingredients :
3 boneless chicken thigh with skin
1 bottle store bought teriyaki sauce
1tbsp ginger juice
salt and pepper for marinate
some toasted white sesame seeds

Method  :
1. Marinate chicken thigh with salt , pepper , ginger juice and some teriyakisauce .

2. Heat non-stick pan with oil ( can omit it ) ,place the chicken pieces from skin side .When skin side is nicely browned flip the chicken ,Then add in teriyaki sauce and the marinade juice .Cook at low heat until the sauce is reduced a bit ( coat the chicken well with sauce by flipping it constantly ).

3. Serve onto a plate .Pour some sauce on top and sprinkle some roasted sesame seeds .

抹茶わらび餅 ~ Matcha Warabi Mochi





食谱取自 cookpad

抹茶わらび餅

材料 A
300ml
1茶匙 抹茶粉
50g 片粟粉
2汤匙 细砂糖

材料 B ( 搅拌均匀 )
2汤匙 黄豆粉
2汤匙 细砂糖

做法
1. 准备一个锅,倒入材料A . 以小火边煮边搅拌的方式煮至透明状。

2. 将(1)倒入碗里。待冷后,放入冰箱冷藏。

3. 放在材料B中,讓表面平均沾上黄豆粉。

4.将(3)稍微压扁后切成小块即可。

Matcha Warabi Mochi

Ingredients A  :
300ml  water
1tsp matcha powder
50g katakuriko
2 tbsp sugar

Ingredients B ( mix well ) :
2 tbsp kinako ( soybean flour )
2 tbsp sugar

Method :
1. In a pot or non-stick pan , add all the ingredients A . Heat and stir until the mixture becomes clear and glutinous.

2. Put the mixture from Step 1 in a dish and chill   Once it cools, chill in the refrigerator.

3. Dust the mochi with kinako thoroughly.

4. Press gently to flatten and cut into bite-sized and serve .

炸柴鱼豆腐 ~ Fried tofu with bonita flakes ( Tosaage tofu )






 
 
我是豆腐的忠实粉丝,这道简单又好吃的料理,我当然不会错过啦 !也要谢谢May 的分享哦!


食谱取自 :厨苑食谱 & 日本の味

炸柴鱼豆腐

材料:
1  板豆腐 (平均切成六块)
60克 柴鱼片
10克 烤香紫菜丝
50克 面粉
1粒蛋(打散)
少许金针菇(切碎)

酱料:
40ml 高汤/鱼汤
10ml 酱青
10ml 料酒

做法:

1. 豆腐顺序沾上面粉,蛋液,柴鱼片。

2. 将(1的豆腐放入热油炸至香脆。

3. 将酱料煮沸, 倒入炸好的豆腐里,让豆腐泡入酱料里。

4. 将紫菜丝和金针菇摆上着装饰。(我将金针菇加入酱料里一起煮)。

Tosaage TofuFried Tofu with Bonito Flakes)

Ingredients
1 box Japanese pressed tofu (cut equally into 6 pieces)
60g bonito flakes,
10g roasted seaweed shreds
50g flour
1 egg (beaten)
some enoki mushroom (chopped)

Sauce:
40ml dashi
10ml shoyu
10ml cooking sake

 
Method:

1. Coat all the tofu with flour,  then secondly with egg and finally with bonito flakes .

2. Deep fry tofu in hot oil until crispy. Remove and drain.

3. Cook sauce and soak tofu into it.

4. Garnish tofu with seaweed shreds and enoki mushroom. ( I cooked the mushroom together with the sauce  )

马玲薯沙拉猪肉卷 ~ Potato salad pork roll

马玲薯沙拉猪肉卷
 
材料
猪肉片  1 / 5oz
玉米粉  1/4
麻油  1 ~ 2汤匙
酱汁
酱油  2汤匙
味霖   2汤匙
   1  1/2茶匙
   1/2茶匙 ,磨碎
 
做法
 
1. 猪肉片铺上少许的马玲薯沙拉,卷起来。洒上玉米粉。
 
2. 烧热1汤匙的麻油。以中火煎.
 
3. 加盖,用中小火再继续煮 3分钟。
 
4.加入酱汁,用锅铲轻轻的把肉卷沾上酱汁

Potato salad pork roll
 
Ingredients:
1 pkg (5 oz) sliced pork  
1/4 cup corn starch
1-2 tbsp sesame oil
Sauce  :
2 tbsp soy sauce
2 tbsp mirin
1  1/2 tsp sugar
1/2 tsp  ginger, grated
 
 
Method  :
 
1. Place Japanese Potato Salad on the bottom end of a piece of sliced pork and roll to wrap it up with the sliced meat. Dredge the rolls in corn starch or sprinkle corn starch on top of rolls. Remove excess corn starch off from the meat.
 
2. Heat 1 tbsp of sesame oil in a large skillet over medium high heat. Gently place the meat rolls in the pan and brown all sides. Do not touch the meat unless the bottom of the meat is nicely golden colour. Then turn to brown all sides. If you start turning the rolls too often, the potato salad will come out from the side. If you need more oil to brown the meat faster, add another 1 Tbsp. of sesame oil.
 
3. When all sides are nicely golden browned, cover and cook 3 minutes on medium-low heat.
 
 4. Add Sauce. Shift the frying pan and rotate the meat rolls to coat evenly. Serve immediately.
 
 
 
 
 

日式马玲薯沙拉 ~ Japanese potato salad

日式马玲薯沙拉

材料:
马玲薯  2
  1/2茶匙
熟蛋   1
红萝卜  2  1/2
1/4 罐装玉米粒
黄瓜  2 我用1/4杯的罐装青豆
火腿  2 切成小块
日式蛋黄酱  1/2
盐和黑胡椒粉适量

 
做法

1.马玲薯去皮,切片。蒸至熟 。倒掉多余的水。

2.蒸好的马玲薯压成泥状。加入少须盐。备用。

3.熟蛋去壳用叉压成泥状。备用。

4.红萝卜切片。青豆,红萝卜片,玉米粒和火腿蒸至半熟。

5.把全部材料(除了鸡蛋)和胡椒粉搅拌均匀。

6.加入日式蛋黄酱和熟蛋再搅拌均匀。放入冰箱冷藏片刻。

Japanese potato salad

Ingredients:
2 potatoes
1/2 tsp salt
1 boiled egg
2  1/2  inch carrot
1/4 cup canned corn kernel
2 inch English cucumbers ( I replaced it with 1/4cup canned green peas )
2 black forest ham slices  ( I used chicken ham slices and cut into small bizes  )
1/2 cup Japanese mayonnaise
Salt
Fresh ground black pepper

 
Method :

1. Peel potato skins and cut into thin slices and steam until cooked . Drain excess water .

2. Mash the potatoes but leave some small chunks for texture. Sprinkle salt and transfer it into a big bowl and let it cool on the kitchen counter.

3. Remove the shell of the boiled egg and mash the egg with a fork in a small bowl. Set aside.

4. Cut carrot into thin slices . Green peas , carrot , corn kernel and ham steam for a few minutes ( do not overcook ! ).

5. Add hams and veggies into the mashed potato bowl. Grind some pepper over and mix well.

6. Add mayonnaise and mix until incorporated , finally add in mashed boiled egg . Let it cool and keep in the fridge till you are ready to serve.
