豉汁凤爪
材料:
15只 凤爪3粒 八角
3片 姜(磨碎)
2粒 红葱 (切碎)
3大匙 豆豉(颗粒)
3大匙 蒜末
2条 红辣椒(切片)
青葱 1根
腌料:
1大匙 生抽1茶匙 糖
1茶匙 盐
调味料:
2大匙 生抽1大匙 蚝油
4 ~ 5粒 小冰糖
1+1/2茶匙 盐
1大匙 绍兴酒
少许胡椒粉
1杯 清水
做法:
1. 凤爪斩除趾尖, 烫过热水沥干。涂上腌料, 腌制4小时以上或隔夜。
2. 放入炸油里炸至金黄色, 沥干油份。
3. 热2大匙热油, 爆香姜蓉, 葱蓉及蒜末。 加入豆豉和红辣椒炒香 , 然后加入凤爪炒匀。
4. 加入调味料, 青葱 和八角, 煮至沸滚, 转以小火焖至稍微干, 加入粟粉水勾茨拌匀。(1大匙粟粉+1大匙清水)。
5. 转至蒸笼里, 以中火蒸至10分钟或熟烂即可, 试味享用。

Steamed
Chicken Feet in Black Bean Sauce
Ingredients
:
15
chicken feet3 star aniseeds
3 slices ginger (minced)
2 shallot (minced)
3 tbsp fermented black beans
3 tbsp minced garlic
2 red chilies (diced)
1 stalk spring onion
Marinate:
1 tbsp soy sauce
1 tsp sugar
1 tsp salt
Seasonings:
2
tbsp soy sauce1 tbsp oyster sauce
4 ~ 5 rock sugar (small size)
1+1/2 tsp salt
1 tbsp Shaoxing wine
a dash of pepper to taste
1 cup of water
Method:
1.
Chop of the claws and discard, scald in boiling water and drain. Place the
chicken feet in a large bowl, brush with marinate sauce and marinate for at
least 4 hours or overnight. Drain the feet and pat dry with paper towel.

Deep fry in boiling oil until golden brown and drain.
3.
Heat 2 tbsp oil, saute garlic, onion and ginger, add fermented black beans and
red chilies stir fry until fragrant. then add in chicken feet, stirring
occasionally.
4.
Add seasoning and star aniseeds, bring to boil then reduce heat to small and
simmer until chicken feet are warmed through and sauce has slightly thickened.
Add thickening ( 1 tbsp corn oil + 1 tbsp water ) and mix well.
5.
Transfer to a bamboo steamer and steam for 10 minutes, taste and serve.
