沙爹酱鸡 ~ Chicken in Satay Curry Sauce




食谱取自 : 变个花样,椰子菜

沙爹酱鸡

材料 A
500g 鸡肉 ( 切小块 )
6汤匙
120g 烤香花生碎

材料 B ( 搅烂 ) :
5 香茅
30g 南姜
100g 小葱头
30g 黄姜
1 1/2汤匙 芫荽粉
2汤匙 辣椒粉

材料 C  :
250ml 浓椰浆
150ml 清水
2汤匙
1茶匙

做法 :
1. 在锅内烧热油,加入材料B炒香。

2. 加入鸡肉块,拌炒一会儿。

3. 加入材料C拌匀,以小火煮10分钟或鸡肉熟透。

4. 加入花生碎拌炒均匀即可。

Chicken in Satay Curry Sauce

Ingredients A :
500g chicken ( cut into bite-sized pieces )
6tbsp oil
120g ground toasted peanuts

Ingredients B ( blended )  :
5 stalks lemongrass
30g galangal
100g shallots
30g turmeric
1 1/2tbsp coriander powder
2tbsp chilli powder

Ingredients C :
250ml thick coconut milk
150ml water
2tbsp sugar
1tsp salt

Method :
1. Heat oil in a wok , add ingredients B and stir-fry until fragrant .

2. Add chicken pieces and stir-fry for a while .

3. Add ingredients C, mix well and simmer for 10 minutes or till chicken is completely cooked .

4. Add ground toasted peanuts and stir-fry .
