食谱取自 : Nasi Lemak Lover
炸莲藕盒
材料:
380g 莲藕( 切成 3 ~ 4mm 厚片)
馅料:
260g 猪/鸡肉碎100g 芋头( 切丁 )
1/2条 红萝卜 ( 切丁 )
1茶匙 生抽
1/2茶匙 米酒
1/2茶匙 盐或适量
1/4茶匙 黑酱油
1棵 青葱 ( 切碎 )
1/2茶匙 姜茸
1 茶匙 木薯粉 / 玉米粉
一撮五香粉
胡椒粉适量
沾炸面糊 :
45g 木薯粉45g 自发面粉
80g 冰水
1/2汤匙 食油
做法 :
1.混合全部材料和调味料至均匀,备用.
2.取一片莲藕,将馅料放在莲藕上,再将另一片莲藕叠上,稍微压一压 。
3.将沾炸面糊材料搅拌均匀 .
4.锅里烧热适量的炸油,把莲藕片沾上面糊,炸至金黄色即可。

Tempura
Stuffed Lotus Root
Ingredients
:
380g
lotus root ( slice into 3-4mm thin slices )Filling :
260g minced meat ( pork or chicken )
150g yam ( cubed )
1/2 carrot ( chopped )
1tsp light soy sauce
1/2tsp rice wine
1/2tsp salt or to taste
1/4tsp dark soy sauce
1 spring onion ( chopped )
1/2tsp grated ginger
1tsp tapioca starch or corn starch
a pinch of Chinese five spices powder
pepper to taste
Tempura
batter :
45g
potato starch45g self-raising flour
80g iced cold water
1/2tbsp cooking oil
Method
:
1.
Mix all filling ingredients in a mixing bowl, mix well and set aside.
2.
Take a slice of lotus root, spoon some filling on it, then take another slice
of lotus root and place on the filling, lightly press to secure. Set aside, and
repeat the rest till finished.
3.
To prepare batter, mix all ingredients in a mixing bowl , stir to combine well.
4.
Heat oil in a wok over medium to low heat. Dip stuffed lotus root into batter,
then deep fry till golden brown.
