巧克力小熊餐包 ~ Bear Cartoon Character Bread Buns

 
食谱取自 carol自在生活
巧克力小熊餐包
20cmX20cmX5cm 方型烤盒一盘约做16
 
材料 :
293g  高筋
7g  无糖可可粉
1/2茶匙 速發乾酵母
30g  细砂糖
1/4茶匙
200ml  牛奶
30g 无盐奶油
 
表面装饰  :
* 全蛋液少許,巧克力醬少許( 巧克力砖切碎用50度温水融化成液状
 
菠萝餅干面皮 :
10g 奶油
20g 低粉
5g 糖粉
3 ~ 5g 牛奶
 
**所有材料直接混合成团,太干就加一點水或牛奶调整。完成后先放冰箱冷藏备用。
 
做法 :
1. 将所有材料 (无盐奶油除外)放入钢盆中搓揉成为成团狀(水要慢慢的加,加入到面团能够成团即可 )。
 
2. 将回软的无盐奶油加入搓揉混合均勻。继续搅拌成光滑而有薄膜的面团。
 
3. 将面团光滑面翻折出滾圆,收口捏紧朝下放入抹少许油的盆中。在面团表面喷一些水避免干燥。
 
4. 将面团放入密关的空间中做第一次发酵60分钟至2倍大。
 
5. 将面团的空气拍出,面团先切出50g做耳朵使用。其余分割成16份小面团(每个约30g ),滚圆后盖上布巾,休面15分钟。
 
6. 方型烤盒鋪上一层防沾烤纸后涂上少许奶油,小面团间隔整齐放入烤模中。整盘放入烤箱中,面团表面喷些水然后盖上烤箱门,再发酵40 ~ 50分钟至2倍大。
 
7. 预先将切下來的50g面团搓成长条,再平均切成32等份。每一個小面团捏圆,盖上干净布巾备用。
 
8. 第二次发酵完成前10分钟将菠萝饼干面皮从冰箱取出稍微回溫.覆盖保鮮膜擀压成约0.2cm薄片。
9. 利用吸管压出直徑约1cm圆形16個。发酵好前8-10分钟,将烤模从烤箱中取出,烤箱打开预热至180度。
 
10. 将耳朵面团黏到每一個小面团上方 ( * 若太干黏不住可以抹一点全蛋液 )
 
11. 嘴巴部位涂抹少许全蛋液,贴上饼干面皮。放进已经预热至180度的烤箱中烘烤20 ~ 22分钟。
 
12. 出炉后马上移出烤模将烤纸撕开散热冷卻。巧克力醬装入塑膠袋中,前端剪一個小孔,挤上眼睛及嘴巴做裝饰即完成。

( 20cm x 20cm x 5cm square pan . Makes 16
 
For the bread :
293g High protein flour or bread flour
7g cocoa powder
1/2 tsp instant yeast
30g caster sugar
1/4 tsp salt
200ml  fresh milk
30g unsalted butter
 
For decorate the bear face :
*some egg wash ,  melted dark chocolate
 
Pastry crust :
10g butter
20g cake flour
5g icing sugar
3 ~ 5g fresh milk
 
** Combine all ingredients together . If it’s too dry , add some fresh milk  . Wrap with clingfilm / plastic wrap and refrigerate until firm .
 
Method :
1. In a stand mixer, add in bread ingredients except butter, mix and knead till smooth.  ( Adding fresh milk gradually )
 
2. Add in butter, knead till elastic and shining dough.
 
3. Shape dough into a ball  . Spray some water at the surface of the dough .
 
4. Cover and set aside to proof for 60mins or until doubled.
 
5. Punch down the dough to expel air, weight 1 portion of 50g for ear , and balance to weight 35g each for 16 portions for the body and shape into round ball. Rest for 15mins.
 
6. Greased the square pan with some butter or place a piece of baking paper  , arrange the 35g small dough into it , repeat till finished .
 
7. Roll 50g dough into long strips . Divide it into 32 portions . Mould it round and cover it with a towel . Set aside .
 
8. Take out the pastry crust from refrigerator . Roll it flat , about 0.2cm thick .
9. Use straw to mould out 1cm round flat dough . Pre-heat the oven at 180c .
 
10. Then place two dough for the ear, lightly press to stick ( * may use some egg wash to stick it  ) .  Repeat till all ear dough finished .
 
11. Brush some egg wash at the mouth area  and place a piece of pastry crust, lightly press to stick . Bake for 20 ~ 22mins .
 
12. Remove from baking tin, set aside till completely cool down before decorate . Fill in a piping bag with melted dark chocolate , then make the eyes and nose .
