柠酱脆肉 ~ Deep-fry Pork Pieces with Lemon Sauce

柠酱脆肉

材料 A :
400g 花肉
1大匙 炒香芝麻

材料 B :
1 鸡蛋
1大匙 面粉
3大匙 薯粉
1/2小匙 苏打粉
1大匙 食油

腌料 :
1小匙 胡椒粉
1/2大匙 酱油
1大匙 蚝油
1/2小匙 细砂糖
1/2大匙 绍兴酒

柠酱 :
2大匙 浓缩柠檬汁
1大匙 鲜柠檬汁
3大匙 细砂糖
1小匙 酱油
1/2 ( 125ml ) 清水

做法 :
1. 花肉去皮,洗净后沥干水,切成小块状,加上腌料拌匀腌60分钟,然后加入材料B ,搅拌均匀。

2. 把小肉放入热油里,以慢火炸至金黄色,捞起,让热油再次烧热,将小肉重炸一次至香脆,捞起,沥油。

3. 将柠汁用料拌匀,煮沸后加入少许粟粉水勾芡,马上加入炸过的小肉,快速兜炒片刻让柠汁浓稠,盛起 ; 撒上芝麻即可。

Deep-fry Pork Pieces with Lemon Sauce

Ingredients A :
400g pork belly
1tbsp fried sesame seeds

Ingredients B :
1 egg
1tbsp plain flour
3tbsp tapioca flour
1/2tsp bicarbonate of soda
1tbsp cooking oil

Marinade :
1tsp pepper
1/2tbsp light soy sauce
1tbsp oyster sauce
1/2tsp caster sugar
1/2tbsp Shaoxing wine

Lemon sauce :
2tbsp lemon syrup concentrate
1tbsp fresh lemon juice
3tbsp caster sugar
1tsp light soy sauce
1/2bowl ( 125ml ) water

Method :
1. Remove the pork belly skin , rinse and drained , cut into small pieces . Season wuth marinade , marinate for 60 minutes then add in ingredients B , mix well .

2. Deep-fry the pork pieces into hot oil at low heat until golden in colour , dish out . Reheat the oil , deep-fry the pork belly pieces again until crispy . Remove and drain well .

3. Mix the lemon sauce ingredients , bring to boil , thicken with a little cornstarch solutions , add in prefried pork pieces , stirring constantly for few minutes until the lemon sauce is thicken . Dish up , sprinkle with fried sesame seeds on top . Serve hot  .
