焖伊面 ~ Briased "Yee Mian" / Crispy Noodle

焖伊面

材料:
伊面 3
虾、鸡胸肉 ( 用薯粉、糖、生抽各少许腌至少1小时 )
鱼饼、菜心
 1茶匙

 
调味料:
2汤匙 蚝油
2汤匙 生抽
老抽 适量上色
1/2茶匙
1汤匙 绍兴酒
适量
400ml 上汤

打芡水:玉米粉适量和水混合

 
做法:
1。热锅放油爆香蒜末,倒入水煮沸。

2。将所有材料和调味料放入,盖上锅盖焖煮10分钟,然后翻炒至伊面软。最后打个芡即可。

Briased "Yee Mian" / Crispy Noodle

Ingredients :
3 pieces “ Yee Mian “ / crispy noodle 
shrimp , chicken meat ( marinade with some tapioca flour , sugar and light soy sauce for at least 1 hour )
fish cake , fresh vegetable of your choice
1 tsp chopped garlic

 
Seasoning :
2 tbsp oyster sauce
2 tbsp light soy sauce
some dark soy sauce
1/2tsp sugar
1tbsp Shao Xing wine
salt to taste
400ml chicken stock

For thickening : cornflour + some water mix until well combined

 
Method :
1. Heat oil in wok , sauté chopped garlic , then add in  water . Bring to boil .

2. Add in noodles and all seasoning ingredients , cover the wok and cook for 10 minutes . Lightly stir-fry the noodles until soft and lastly add in cornflour mixture .
