黄金南瓜糕 ~ Steam Pumpkin Cake

黄金南瓜糕

材料:
400g 南瓜 / 金瓜 ( 削皮,净重 )
3 ~ 4大匙  虾米   ( 切碎 )          
200g 猪肉碎  
1 大匙 小葱       
1 大匙  蒜茸            

米浆材料:
300g  粘米粉   
2大匙 澄面粉   
2大匙 薯粉       
800g  

调味料
1 小匙            
1 小匙            
1 小匙 胡椒粉   
1 小匙 鸡精粉  我没放


做法:
1. 爆香小葱蓉和蒜蓉后,加入南瓜丝,猪肉碎和虾米炒至南瓜变软。(如炒的过程有点干的话,可加少量水 ). 1

2. 米浆材料拌匀后加调味料混合,过筛。

3.  1)和(2)倒入锅中,中火将米浆煮成浓稠的面糊,其间要不停搅拌防止焦底。 2

4. 煮好的面糊盛起,平铺在涂油的盘内,大火蒸 40 分钟。 3

5. 待冷后,撒上配料,即可切块享用。

Steamed Pumpkin Cake

Ingredients :
400g pumpkin  ( peeled & shredded )
3 ~ 4tbsp dried prawn
200g minced meat
1tbsp chopped shallots
1tbsp chopped garlic
Batter :
300g rice flour
2tbsp wheat starch
2tbsp tapioca flour
800g water

Seasoning :
1tsp salt
1tsp sugar
1tsp pepper
1tsp chicken powder ( I omit it )

Garnishing :
1 red chilli  ( finely chopped )
1 stalk spring onions  ( cut into small pieces )
50g fried sliced shallots

Method :
1. Heat oil in wok and saute garlic and shallots till fragrant.  Add in shredded pumpkin , minced meat and dried prawns fry till aromatic.
2. Mix all batter ingredients together, then add in seasoning , stir well and strain .
3. Pour in (1) and (2) in a wok .  Continue stirring on medium heat till batter thickens . Stir to mix until batter is well combined.
4. Pour into the greased steaming tray.  Smooth the surface and steam over high heat for 40 minutes .
5. Cool and before serving, sprinkle spring onions, chilli and fried shallots on cake.
