脆炸豆腐丸子 ~ Fried Beancurd Balls





食谱取自 : 滋味豆腐料理

脆炸豆腐丸子
材料 :
200g 嫩豆腐
200g 猪肉碎
3 香菇 ( 浸软,剁碎 )
60g 榨菜 ( 浸软 ,剁碎 ) ( 我用红萝卜碎 )
1 青葱 ( 切粒 )
1汤匙 炸葱
1汤匙 炸葱油
面包糠适量
1 蛋白 ( 打散 )

调味料 :
1/2茶匙
1/2茶匙
1汤匙 玉米粉
1/4茶匙 胡椒粉
1茶匙 麻油
1/2 蛋白

做法 :
1. 嫩豆腐洗净后沥干,放入筛子中 ,沥干水份,然后将其挤压入碗里,成细泥状,备用。

2. 加入猪肉碎和调味料拌匀,搅拌至起胶,然后加入剩余的材料(蛋白和面包糠除外 )拌匀,搓成肉丸状。

3. 把丸子沾上蛋白后再滚上面包糠,然后放入热油中炸约5分钟至金黄色,盛起沥干油即可。

Fried Beancurd Balls

Ingredients :
200g soft beancurds
200g minced pork
3 pcs mushroom ( soaked and chopped )
60g Sichuan preserved vegetable ( soaked and chopped )
1 stalk spring onion ( chopped )
1tbsp fried shallot
1tbsp fried shallot oil
some breadcrumbs
1 egg white ( beaten )

Seasonings :
1/2tsp salt
1/2tsp sugar
1tbsp corn flour
1/4tsp pepper
1tsp sesame oil
1/2 egg white

Method :
1. Rinse and drain soft beancurd . Place bean curd in a sieve and drain off excess water , then mash through the sieve into a bowl . Set aside .

2. Combine with minced pork and seasonings , stir until sticky . Add the remaining ingredients ( except egg white and breadcrumbs ) and mould into balls .

3. Coat the balls with egg white , followed by breadcrumbs , and deep-fry in hot oil for 5 minutes until golden brown . Remove and drain  .
