黄金满地(金蒜芝麻鸡)~ Golden Garlic Chicken with Onion Ginger Sauce






食谱取自 团圆满堂

黄金满地(金蒜芝麻鸡)

材料:
1/2 土鸡
40g 蒜瓣 剁碎
1大匙 炒香芝麻

腌料:
1/2大匙
2大匙 玫瑰露

蘸酱材料:
80g 葱花
60g 姜茸
1小匙 麻油
1/2小匙  
3大匙 食油

做法
1. 把鸡洗净,加入腌料拌匀,腌渍30分钟。

2. 蒜茸用热油炸至金黄香脆,捞起,沥油。加入芝麻拌匀,备用。

3. 准备蘸酱 :锅里烧热3大匙食油,加入葱花和姜茸略炒一下,加入麻油和盐拌匀。

4. 把鸡盛入预热蒸炉,大火蒸20分钟,熄火,古10分钟至熟透,盛起,待冷却。

5. 把鸡肉剁块,撒上金蒜芝麻,配上葱花姜茸蘸酱,即可食用。

Golden Garlic Chicken with Onion Ginger Sauce

Ingredients :
1/2no free range chicken
40g garlic cloves ( chopped )
1tbsp fried sesame seeds

Marinade :
1/2tbsp salt
2tbsp Chinese rose wine

Dipping sauce :
80g chopped spring onion
60g chopped ginger
1tsp sesame oil
3tbsp cooking oil

Method :
1. Rinse chicken , season it with marinade . Marinate for 30 minutes .

2. Deep-fry garlic in hot oil until golden brown and crispy , dish out and drain . Add sesame seeds , mix well and set aside .

3. To make dipping sauce , heat up 3tbsp cooking oil in wok , add ginger and spring onion , stir well . Add sesame oil and salt , mixed . Dish out .

4. Steam chicken in a preheated steamer , steam for 20 minutes over high heat  . Flame out  , covered for 10 minutes till cooked thorough  . Dish out and leave to cool .

5. Cut chicken into pieces , sprinkle with fried garlic mixture . Serve with dipping sauce  .
