豉汁蒸排骨 ~ Steamed Spare Ribs in Black Bean Sauce


豉汁蒸排骨

材料:
300g排骨
1大匙
2 姜( 剁碎
1 大匙 葱花
1 红辣椒(切片)
1大匙 豆豉( 剁碎

腌料:
1小匙 生抽
1茶匙
1茶匙

调味料:
1/2 生抽
1/2小匙 白砂糖
1/8茶匙  
1大匙 绍兴酒
少许胡椒粉和食油

做法
1. 排骨用水洗净,沥干水分后用斩骨刀剁成3cm 小块,放入大碗中备用。

2. 中火加热炒锅中的油至5 成热,爆香蒜末、姜末和豆豉。

3. 将炒好的材料放入装有排骨小块的大碗中,加入红辣椒粒和调味料搅拌均匀,用保鲜膜包好腌制15 ~ 30分钟。

4. 将腌渍过的排骨平铺在一个盘子中/竹蒸笼 ,撒上葱花。

5. 大火烧开蒸锅中的水,放入装有排骨的平盘,盖好锅盖隔水蒸10 分钟。


Steamed Spare Ribs in Black Bean Sauce

Ingredients
300g spare ribs
1tbsp chopped garlic
2 slices ginger ( chopped )
1tbsp chopped spring onion
1 chilli ( diced )
1tbsp fermented black beans ( chopped )

Marinate :
1tsp light soy sauce
1tsp sugar
1tsp salt

Seasoning :
1/2tsp light soy sauce
1/2tsp sugar
1/8tsp salt
1tbsp Shaoxing wine
pepper to taste
some cooking oil

Method :
1. Wash and rinse spare ribs , cut into 3cm pieces  . Set aside .

2. Heat wok with some cooking oil  . sauté chopped garlic , ginger and fermented black beans .

3. Pour  (2) into (1) , then add in chillies and seasoning  . Mix until well combined , wrap with cling film and marinate for 15 ~ 30minutes .

4. Pour marinated spare ribs into a tray / plate or bamboo steamer  , sprinkle some chopped spring onion .

5. Steam at high heat for 10 minutes  . Serve hot .
