自制茄汁沙丁鱼 ~ Homemade Sardines in Tin





食谱取自 Syn Sai

自制茄汁沙丁鱼

材料:
500g  沙丁鱼或甘望鱼
青葱适量
姜片适量
蒜头适量 去皮
清水适量

调味料:
100g 番茄酱
蚝油

花雕酒
冰糖
酱油


做法
1. 鱼洗净,去掉头部。锅里加入少许油,把鱼微煎至金黄色。盛起,备用。

2. 锅里留少许油爆香青葱,蒜头和姜片。然后加入调味料和鱼,一起炒香。试味。

3. 加入清水刚好盖过鱼,煮至滚后熄火。

4. 放入电子砂锅,高火煮2小时,小火煮6小时即可。

Homemade Sardines in Tin

Ingredients :
500g sardine or ikan kembung
some spring onion ( cut into section )
some sliced ginger
some whole garlic ( peeled )
water

Seasonings :
100g tomato sauce
oyster sauce
vinegar
Shao Xing wine
rock sugar
soy sauce
salt

Method :
1. Wash the fish and discard the head . Heat wok with some oil , fry the fish till golden brown .

2. Leave some oil in the same wok , sauté spring onion , sliced ginger and whole garlic . Add in seasonings and fish , stir-fry till aromatic . Adjust the taste .

3. Add in adequate water ( water must cover enough the fish ) . Bring to boil  and turn off heat .

4. Pour it into slow cooker , cook at high heat for 2 hours and low heat for 6 hours . Serve .
