抹茶牛奶酱 ~ Matcha & Milk Spread




食谱取自 下厨房

抹茶牛奶酱

材料 A :
50ml 牛奶
10g 抹茶粉

材料 B  :
150ml 牛奶
100ml 淡奶油
30g 白砂糖

做法
1. 把材料A 的牛奶加热到体温左右的温度,加入过筛好的抹茶粉,用蛋器充分搅匀至没有结块,顺滑的状态,制成抹茶牛奶溶液。

2. 材料B 的牛奶和白砂糖、淡奶油一起加入较深的锅中,以小火加热至颜色变黄、摇晃时看不到锅底的粘稠炼乳状,整个过程大约需要15分钟,需要不断搅拌,后期请戴上隔热手套进行操作,以免被热气灼伤.

3. 把抹茶牛奶溶液加入步骤(2中,充分搅拌均匀后以小火煮至浓稠(需要不断搅拌以免烧焦,整个过程大约需要15 ~ 20分钟),即可关火,倒入耐热容器保存。

小贴士
1.这材料分量可制出180ml左右的抹酱 .

2.这款抹酱放置一段时间后颜色会改变,所以不建议大量制作长期保存,随做随吃最好啦。

3.抹酱的浓稠度,请依自己的喜好来做调整。

4.在步骤3里,也可以隔水慢火煮至浓稠。

Matcha & Milk Spread

Ingredients A :
50ml milk
10g matcha powder

Ingredients B :
150ml milk
100ml dairy whipping cream
30g caster sugar


Method :
1. In a pot , heat the milk . Then add in sifted matcha powder , use egg whisk to mix until well combined  and smooth  .

2. Pour all ingredients B into a deep pot , at low heat cook the mixture till  pale in colour ( like sweetened condensed milk colour ) , stirring it from time to time . It takes about 15 minutes .

3. Remove the pan from the heat and pour mixture (1) into (2) . Whisk until  the mixture is well combined . At low heat , cook  & stir constantly until the mixture has thickened and set ( about 15 to 20 minutes ) . Turn off heat , allow the mixture to cool . Keep in sterilized jar and store in the fridge.


Tips :
1. This can makes 1 small jar or 180ml .

2. The colour of the spread will slightly change after sometimes , better to make in small portion  .

3. You may adjust the thickness of the spread to your liking .

4. May use double- boil method in step 3 .
