四季丰收( 腊味糯米饭 ) ~ Glutinous Rice with Chinese Preserved Meat










这是客家人的功夫菜,过年餐桌上绝对少不了这一道。

食谱取自 丰年团圆

四季丰收 (腊味糯米饭)

材料:
糯米 200g
腊肠  2 切片)
青葱   1棵 ( 切粒 )
香菇 6 (泡水浸软,切片)
虾米 10g ( 泡水浸软 )
蒜茸   1汤匙
1杯清水

调味料:
生抽  2汤匙
老抽 / 黑酱油    1汤匙


做法
1.  糯米泡水4小时。沥干待用。

2. 锅中烧热3汤匙食油,爆香蒜茸。

3.加入虾米和腊肠炒至香。
                 


4.加入糯米拌炒至均匀混合。放入调味料炒至香,加入1杯清水拌匀。
                  



5.熄火,把糯米盛入蒸碗。放入蒸笼以大火蒸1小时后,在糯米中倒入1/2碗水,用汤匙搅拌至松软,再继续蒸1小时。

6.从蒸笼取出糯米饭,撒上青葱粒即可。

Glutinous Rice with Chinese Preserved Meat

Ingredients :
glutinous rice   200g
Chinese preserved sausage   2 pieces ( sliced )
spring onion 1 stalk ( chopped )
dried Chinese mushroom  6 pieces   (soak in water until become soft and sliced )
dried shrimp   10g ( soak in water until soft )
chopped garlic 1tbsp
1 cup water

Seasonings :
light soy sauce  2tbsp
dark soy sauce 1tbsp


Method :
1. Soak  glutinous rice in water for 6 hours , drain .

2. Heat up 3tbsp of cooking oil in a wok , sauté chopped garlic until fragrant .

3. Add in dried shrimp and Chinese preserved sausage , stir-fry until fragrant .

4. Add in glutinous rice to stir-fry until well combined , add in seasoning and stir-fry until fragrant . Add in 1 cup of water and mix well .

5. Turn off heat , transfer glutinous rice to a big bowl, put it into steamer and steam over high heat for 1 hour. Pour 1/2 bowl of water into the glutinous rice , stir with a spoon to loosen the glutinous rice , continue to steam for another 1 hour .

6. Remove glutinous rice from the steamer , sprinkle with chopped spring onion . Serve .
