肉丝糯米饭 ~ Meat Floss Glutinous Rice



食谱取自 :咸的,甜的,都好吃!  

肉丝糯米饭

材料 A
600g 糯米 洗净,浸水2个小时,沥干)

材料 B 拌匀 :
800ml 上汤
3汤匙  食油 我用炸葱油
盐和胡椒粉适量

材料 C :
150g 肉松
1/2 炸葱片

材料D :
100g 
虾米 洗净,切碎

做法
1. 3汤匙油入锅内烧热,放入虾米炒香后取出。

2. 倒入适量清水入锅内,把蒸锅放在上面,倒入糯米。

3. 200ml材料B洒在糯米上,盖着。大火蒸至冒出大烟。

4. 再洒入200ml材料B,再盖着蒸至冒烟,重复这个步骤至糯米饭软熟。

5. 将糯米饭取出,倒入一个8寸盘内。用汤匙背压紧。

6. 然后将材料C和炒香虾米洒在面上。切块后即可享用。

Meat Floss Glutinous Rice

Ingredient A :
600g glutinous rice ( wash and soak in water for 2 hours , drain )

Ingredients B ( mix well ):
800ml broth
3tbsp oil ( I used shallots oil )
salt and pepper to taste

Ingredients C :
150g meat floss
1/2cup fried shallot

Ingredients D :
100g dried shrimp  ( wash and chopped )
Method :
1. Heat 3tbsp oil in wok , stir-fry dried shrimp until fragrant . Remove .

2. Pour adequate water into a pot , put steamer on top .Add in glutinous rice into the steamer .

3. Sprinkle 200ml of premixed ingredients B over the rice and cover to steam until strong steam appears .

4. Sprinkle another 200ml of ingredients B and steam again . Repeat the steps until the glutinous rice soften and cooked .

5. Transfer the cooked glutinous rice into a 8 inches tray . Press tight with the back of spoon .

6. Sprinkle the top with ingredients C and fried dried shrimps . Cut into pieces and serve .
