香葱肉松面包卷 ~ Spring Onion Meat Floss Roll

 




 


最近的我满脑子都想着面包,吐司,面包,吐司。连发梦也梦到面包,吐司。
我....是不是中了面包毒呢?


食谱取自:周老师《天然手作面包101道》


香葱肉松面包卷 可做3盘共18

材料:
基本软面团
320g
6g  速发酵母
520g  高筋面粉
100g  低筋面粉
80 g  砂糖
7.5g 盐    
1全蛋   
80g 无盐奶油  

装饰:
蛋液适量 
葱花适量  
白芝麻适量

馅料:
美乃滋适量
肉松适量

做法 :
1.把从水到蛋等7项材料加入搅拌缸,快速搅拌成团。加奶油打至薄膜 面团相当黏软哦!)。基本发酵2小时。

2.把发酵好的面团分成3等份。滚圆,松驰15分钟。

3.把一份放在 33cm x 42cm 的烤盘布上,慢慢捍开,直到接近烤盘布的大小。要把面团捍成方形。( 我用14 x 10寸蛋糕卷烤盘 )

4.同法捍好3盘。最后发酵50分钟至完全没弹性。

5.烤箱预热至190度。在面片上刷蛋水,洒上葱花和白芝麻。用筷子刺洞。以免烤时鼓起。

6.放中上层烤10 ~ 12分钟,如果周围颜色开始比中间深,就用铝箔纸盖住。烤至表面呈金黄色,底面稍稍着色即可。取出,放凉。 (图1

7.在一个宽边画开4 ~ 5刀。翻面,抹沙拉酱。(图2

8.从画开处卷起来。让画开的地方裂开,才不致于整个破裂。包着放一下才会固定。

91条切成6小段。切面抹点美乃滋再沾肉松,即可。

 
Spring Onion Meat Floss Bread Roll
Ingredients :
Basic soft dough
320g water
6g instant yeast
520g bread flour
100g low protein flour
80g castor sugar
7.5g salt
1 egg
80g unsalted butter
Garnishing :
egg ( lightly beaten )
chopped spring onion
white sesame seeds
Filling :
mayonnaise
meat floss
 
Method :
1. Add in all items ( except unsalted butter ) , beat at high speed until well-combined . Add in unsalted butter and knead to form elastic dough.
2. Divide dough into 3 portions . Roll into round balls and let it rest for 15 minutes .
3. Take 1 portion of dough and put it on the baking paper . Flatten and roll it with rolling pin  into square shape ( 33cm x 42cm ). ( I used  14” x 10” swiss roll baking tray )
4. Cover the dough and let it proof for another 50 mins.
5. Pre-heat the oven at 190c . Egg wash the dough , sprinkle some chopped spring onion and white sesame seeds . Stab holes with chopsticks .
6. Put the tray at the upper level  and bake for 10 ~ 12 minutes . Cover it with aluminium foil if necessary . Remove the bread from baking tray immediately after baking. ( Picture 1 )
7. Cut 4 ~ 5 lines on the dough ,  remember to leave 1cm at the edge close to you Not cut off. ( Picture 2 )
Turn it to other side , spread some mayonnaise .
8. Gently roll up the dough to make a Swiss roll with the baking paper . Let it sit for a while to set .
9. Cut into 6 small portions , spread some mayonnaise at the cut point and sprinkle some meat floss .
