印尼炒面 ~ Bakmie Goreng / Indonesian Stir-fried noodles

印尼炒面

材料:
黄面 450
食油  2汤匙
小葱头 2粒(切碎)
青葱 3棵(切碎)
蒜头 2瓣(切碎)
4条(切碎)
虾酱 1汤匙 我用)
番茄酱 1汤匙
印尼甜酱油 2汤匙
鸡蛋 4
适量

装饰用的炸葱:
食油2汤匙
小葱头 4粒(切薄片)

 
做法:
1.装饰用的炸葱:烧热锅,放入适量的油,放入葱头片,炸至金黄色即可捞起,沥干油份备用。

2. 煮一锅热水,把面条放入,川烫一会儿即可捞起,然后用冷水冲洗一下,沥干水份备用。

3. 在一个较大的锅里加入适量的油,爆香小葱头,青葱,蒜头和指甜椒。然后加入虾酱炒至颜色变深。
                 


 4. 加入面条,拌炒至均匀,然后再加入番茄酱和印尼甜酱油,拌炒大约23分钟,加入适量的盐调味。
                 


 5. 在另一个煎锅里加入油,烧热,打入鸡蛋,煎至蛋白熟,蛋黄呈半生熟状即可。把煎好的蛋放在面上,撒少许炸葱,乘热食用。

Bakmie Goreng / Indonesian Stir-fried noodles

Ingredients :
450g fresh egg noodles
2tbsp cooking oil
2 shallots ( finely chopped )
3 spring onions ( finely chopped )
2 garlic cloves ( chopped )
4 Thai chillies ( seeded and finely chopped )
1tbsp Terasi / Indonesian shrimp paste ( I used belacan )
1tbsp tomato paste / puree
2tbsp kecap manis ( Indonesian sweet soy sauce )
4 eggs
salt to taste

To garnish :
2tbsp cooking oil
4 shallots ( finely sliced )

 
Method :
1. First prepare the garnish : Heat oil in a pan , stir in shallots and fry until golden brown . Drain on kitchen paper and set aside .

2. Fill a deep pan with water and bring to boil . Drop in the egg noodles ,and cook for about 3 minutes until tender but still firm to the bite  . Drain and refresh under running cold water .

3. Heat oil in a wok , fry the shallots , spring onions , garlic and chillies until fragrant . Add the terasi and cook until the mixture darkens .

4. Toss the noodles into the pan , making sure that they are thoroughly coated in the mixture . Add tomato puree and kecap manis , toss thoroughly and cook for 2 ~ 3 minutes . Season with salt to taste .

5. Heat a thin layer of oil in a large frying pan , and crack the eggs into it . Fry for 1 ~ 2 minutes until the whites are cooked but the yolks remain runny .Place on the noodles and serve immediately with fried shallots sprinkle over the top .
