中式咖喱鸡 ~ Curry Chicken in Chinese-style






 


 
 
食谱取自 就是爱咖喱

中式咖喱鸡
材料 A :
鸡肉 1  1/2公斤(切成小块
咖喱叶   1
马铃薯 200g (去皮,切角,油炸)
浓椰浆  200ml

材料 B ( 捣烂 )
小红葱   150g 去衣)
蒜头  6
香茅  2枝(切半
巴拉煎    20g
辣椒糊  3汤匙

材料 C :
咖喱粉   4汤匙

 
材料 D :
清水  1
  1茶匙
  1茶匙

 
做法 :
1. 在锅中烧热7汤匙油,加入材料B和咖喱叶炒香。加入鸡肉拌炒一会儿,然后加入材料C拌匀。



 

         
2.加入材料D拌匀,用小火煮至鸡肉变软。




                              
3.加入炸马铃薯和浓椰浆,煮沸。盛起享用。

 Curry Chicken in Chinese-style

Ingredients A :
chicken  1  1/2kg ( cut into bit-sized )
curry leaf   1 handful
potato  200g ( peeled , cut into wedges and deep-fried )
thick coconut milk   200ml


Ingredients B ( pounded ) :
shallot  150g ( skinned )
garlic   6 cloves
lemongrass   2 stalks ( cut into halves )
belacan   20g
chilli paste 3tbsp

 
Ingredients C :
curry powder  4tbsp

 
Ingredients D :
water  1cup
salt   1tsp
sugar 1tsp

 
Method :
1. Heat up 7tbsp of oil in a wok , add in ingredients B and curry leaves , stir-fry until fragrant . Add in chicken and stir-fry for a while , followed by ingredients Cand mix well .

2. Stir in ingredients D and simmer over low heat until chicken pieces are tender .

3. Add in fried potato wedges and thick coconut milk , bring to boil . Serve with white rice .
