芝麻肉丸 / 红糟三层肉 / 黑豆玉竹汤 ~ Steamed Sesame Seed with Meat Balls / Stir-fry Pork Belly and Red Grain Wine Residue / Spare Rib Soup with Black Bean and “ Yu Zhu “



食谱取自 :女人味

芝麻肉丸

材料:
500g  半肥瘦猪肉
芝麻适量
葱花适量

腌料:
1大匙  黑酱油
1大匙  姜汁
1/2小匙 
1小匙  酱油
1小匙  粟粉

做法
1. 把猪肉搅拌机里捣成绞肉,取出,加入腌料搅拌均匀,并打起胶质。腌渍30分钟。

2. 芝麻放入热锅里,用小火干炒香浓,盛出,备用。

3. 猪绞肉分成小等份,搓成肉丸,滚上芝麻。

4. 将芝麻肉丸排上蒸盘,盛入预热蒸炉,盖上,大火蒸20分钟至熟。离火,撒上葱花,即可上桌。

Steamed Sesame Seed with Meat Balls

Ingredients :
500g pork with fat
some sesame seeds
some chopped spring onion

Marinade :
1tbsp dark soy sauce
1tbsp fresh ginger juice
1/2tsp salt
1tsp light soy sauce
1tsp corn flour

Method :
1.  Blend pork into a food processor become minced pork . Dish out , mix with marinade and stir until sticky . Marinade for 30 minutes .

2. Stir-fry sesame seeds in a preheated wok without cooking oil until fragrant over low heat . Dish out , set aside .

3. Evenly divide minced pork into small portions , and shape each into meat ball . Coat with sesame seeds .

4. Arrange sesame meat balls onto a steaming plate , steam over simmering water in a covered wok over high heat for 20 minutes until cooked . Remove from heat , sprinkle with spring onion . Serve hot .

红糟三层肉


 
材料 :
250g  三层肉 / 五花肉( 切片)
20g  姜茸
3大匙 福州红糟
适量青葱段
2大匙 食油
50ml 热水
 
调味料:
1/4小匙 
1/4小匙  砂糖

做法
1. 锅里烧热食油,爆香姜茸,加入五花肉,大火炒至花肉转色。

2. 加入红糟,改用中火炒片刻至香浓。

3. 加入热水及调味料,大火快速拌炒至收汁,熄火,盛起,撒上葱段。即可.

Stir-fry Pork Belly and Red Grain Wine Residue

Ingredients :
250g pork belly ( sliced )
20g chopped ginger
3tbsp red grain wine residue
some sectioned soring onion
2tbsp cooking oil
50ml hot water
 
Seasoning :
1/4tsp salt
1/4tsp caster sugar

Method :
1. Heat cooking oil in a preheated wok to sauté ginger , add pork belly , stir-fry briskly over high heat until the colour of pork is change ,

2. Add the red grain wine residue , stirring constantly over high heat until well combined and aromatic  .

3. Add in hot water and seasoning , toss over high heat until the gravy is absorbed  . Remove from heat , dish out , sprinkle with spring onion . Serve hot .

黑豆玉竹汤
材料:
500g 排骨
300g 黑豆
10 红枣
20g 玉竹
4.5公升 清水
 
调味料
1大匙
 
做法
1. 排骨洗净,剁块,放入沸水里大火灼烫一会。盛出,沥水,备用。
 
2. 黑豆洗净,沥干水份,放入热锅里,小火干炒5分钟至黑豆稍微爆开为止。盛起,备用。
 
3. 汤锅里注入清水,大火煮沸。加入炒过的黑豆,红枣及玉竹。再次煮沸后,盖上,以小火煮2小时。
 
4. 加入排骨,继续煲约1小时。加入盐调味,即可。

Spare Rib Soup with Black Bean and “ Yu Zhu “
Ingredients :
500g spare ribs
300g black beans
10 red dates
20g “ Yu Zhu “
4.5 litres water
 
Seasoning :
1tbsp salt
 
Method :
1. Rinse spare rib , cut in pieces and blanch it in the boiling water over high heat . Dish out , drain and set aside .
 
2. Rinse black beans , drain well . Stir it in hot wok without cooking oil over low heat for 5 minutes until the black bean’s skin slightly crack . Dish up , keep aside .
 
3. In a soup pot , add water . bring to boil over high heat Add black beans , red dates and “ Yu Zhu “ ,bring to boil again. Cover with lid , let it cook for 2 hours over low heat .
 
4. Add the spare ribs , allow to cook for 1 hour . Remove from heat , season with salt . Serve hot .
