脆皮芝麻素鸡 ~ Crispy Sesame Vegetarian Chicken







食谱取自 团圆满堂

脆皮芝麻素鸡

材料:
10片 豆包/豆筋
5张 腐皮
适量芝麻
2 牙签

腌料:
1大匙 酸梅酱
1大匙 粟粉
1小匙 胡椒粉
1小匙 麻油
1/2小匙 五香粉
1/2小匙
1/2小匙 砂糖

调味汁料(拌匀
1/2大匙 素蚝油
1/2小匙 砂糖
1/2大匙 酱油
3大匙 清水
1小匙 粟粉

做法 :
1. 豆包撕开成小片,加入腌料拌匀,待用。

2. 把一张腐皮打开,铺平。扫上一层调味汁料,盖上另一张腐皮(同样做法完成其余腐皮 )。

3. 把腌好的豆包排在腐皮上,然后折成三层,两端用牙签封口做成素鸡。

4. 把素鸡放入预热蒸炉,盖上,大火蒸10分钟,取出,待冷却。

5. 素鸡上面涂上少许面糊,撒满芝麻,轻轻压紧。

6.烧热油,放入芝麻素鸡,大火炸至金黄酥脆,即可捞起,沥油后切块上桌。

Crispy Sesame Vegetarian Chicken

Ingredients :
10 nos bean gluten / “ Dou Bao “
5 pieces soft beancurd sheets ( 8 x  8 inches )
some sesame seeds
2 stalks bamboo skewer

Marinade :
1tbsp plum  sauce
1tbsp corn flour
1tsp pepper
1tsp sesame oil
1/2tsp five spice powder
1/2tsp salt
1/2tsp caster sugar

Seasoning sauce ( mix well ) :
1/2tbsp vegetarian oyster sauce
1/2tsp caster sugar
1/2tbsp light soy sauce
3tbsp water
1tsp corn flour

Batter ( mix well ) :
2tbsp plain flour
6tbsp water

Method :
1. Torn the bean gluten into pieces , season it with marinade . Keep aside .

2. Spread out beancurd sheet , brush some seasoning sauce mixture , cover with a piece of beancurd sheet . ( repear to finish the remaining beancurd sheet ) .

3. Arrange the marinated bean gluten onto beancurd sheets , fold into half become 3 layers. Seal edges with bamboo skewer become vegetarian chicken shape .

4. Put vegetarian chicken in a preheated steamer , steam over high heat for 10 minutes. Dish out , leave to cool .

5. Brush a little batter over the vegetarian chicken , coat with sesame seeds and press lightly .

6. Deep-fry vegetarian chicken in hot oil over high heat until golden brown abd crispy . Dish out and drain , cut into pieces . Serve hot .
