蒜香茄子 ~ Fried Garlic with Eggplant

蒜香茄子

材料:
1公斤  茄子
1 蒜头( 切片)
3 红葱头 切片)
2  桔子 取汁

 
调味料:
1/2 小匙
1/2 小匙  香菇精 我没放

 
做法
1 将茄子洗净,放入沸水中煮15分钟至熟。取出,沥干水份后,去皮,压烂。 (图1

2.锅里烧热5大匙食油,小火爆香蒜片和红葱,加入茄子糊及调味料炒香浓。

3.熄火,上碟,撒上桔子汁拌匀,即可上桌。

Fried Garlic with Eggplant

Ingredients :
1kg eggplant
1 head garlic ( sliced )
3 red shallots ( sliced )
2 calamansi limes ( juice only )

Seasoning :
1/2  tsp salt
1/2 tsp mushroom stock powder

 
Method :
1. Clean the eggplant  , cook it in the boiling water over high heat for 15 minutes until cooked . Dish up , drain well , peeled and mash . ( Picture 1 )

2. Heat up 5tbsp cooking oil in wok to sauté sliced garlic and red shallot over low heat . Add the eggplant and seasoning , toss until well combined .

3. Remove from heat , put into serving plate , add in lime juice . Serve at once .
