自制老鼠粉 ~ Home-made noodles

食谱取自 : Regine Leo

木薯粉  50g
热水   500ml


1.  把澄面粉和木薯粉和热水搅混合。( 这个动作很烫手,可以用面包搅拌机做,如果没有面包搅拌机,就用汤匙慢慢搅拌).

2.  然后20分钟。

3.  手沾很少量的食油,把面团搓成一粒粒的待用。(不必太小粒)

4.  烧热水一锅 水,备用。把面团搓成细长形,然后一粒粒的拉断他让它看来有老鼠粉的样子然后放进去煮,浮起来了就可以捞起,再过冷河。

5准备一个大碗,把老鼠粉加入食油捞均匀即可。( 以防老鼠粉粘合在一起 )

6. 分隔成袋,放入冰箱可保持一个星期 .

Home-made noodles

Ingredients :
wheat starch 250g
tapioca flour  50g
boiled water 500ml

Method :

1. Mix wheat starch and tapioca flour with boiled water . ( You may use mixer to do this step , or just use a stainless steel spoon to mix it together until well combined ) .

2. Let it rest for 20 minutes .

3. Divide the dough into small balls . If it is too sticky , you may greased some cooking oil at your hand .

4. Bring a pot of water to boil . Take a small ball and roll it with your hand until it become a long strip . Add noodles into boiling water and cooked until transparent . Transfer noodles into cold water to wash out excess starch .

5. Prepare a big bowl with some cooking oil .  Add in the cooked noodles and mix well . This is to prevent noodles stick together .

6. Separate it into different plastic bag or container and keep it in refrigerator for up to 7 days .
