泰式鸡肉碎 ~ Thai basil chicken ( Gai Pad Krapow )



 
 
 
 
 
 
~ 九层塔 / Thai basil ~
 
食谱取自 Cass @ 揾到食

泰式鸡肉碎
材料 :
鸡胸肉碎  200-250g (也可以用猪肉碎)
九层塔 1把( 去茎取叶 )
小辣椒 6-8条(如不喜欢太辣,去籽)
黑酱油 1 茶匙蒜茸 1 汤匙
鱼露 1 - 1.5 汤匙
白糖 1 茶匙
胡椒粉 适量
青柠檬片 2

( 不同牌子的鱼露,咸度会不同,以上鱼露分量只供参考,我用的是刀票牌 Knife Brand

做法

1. 肉碎加入1汤匙鱼露和少许胡椒粉腌制一会。

2. 热油锅,爆香蒜茸,加入肉碎炒至松散,加入切碎的小辣椒翻炒,加入1/2杯的水和鱼露及白糖调味,焖煮一会,加入黑酱油和九层塔炒均匀,即可,吃前挤入青柠檬汁,更加美味

Thai Basil ChickenGai Pad Krapow
 
Ingredients :
minced chicken meat  200 ~ 250g
1 big bunch of Thai basil leaves (stems removed)
6 ~ 8 bird’s eye chilies ( chopped  )
dark soy sauce 1tsp
chopped garlic 1tbsp
fish sauce  1 ~ 1.5tbsp
sugar 1tsp
pepper
lime 2 slices
water  1/2cup
 
Method :
 
1.  Marinade chicken meat with some fish sauce and pepper .
 
2. Heat up wok , sauté chopped garlic and chicken meat . Use the spatula to quickly stir-fry and break the ground chicken meat into small lumps . When the chicken meat changes color, toss in the chilies , water and seasonings ( fish sauce and sugar ) and continue to stir-fry .  Add in dark soy sauce and basil leaves and do a few quick stirs until the basil leaves are wilted and you smell the exotic fragrance of the basil leaves  . Dish out and serve immediately with some lime juice .
