菲律宾椰汁玉米糕 ~ Filipino Maja Blanca Mais


食谱取自 : Ping desserts 


2 椰浆  ( 1杯 = 250ml )
1/3 玉米粉   
1茶匙 练奶
1/3 鲜奶
1/3 幼糖
1/2 玉米粒
Latik , 玉米脆片 / 烤香的干椰丝 装饰


2.以小火再煮10分钟 (要不停的搅拌哦!)。鲜奶和玉米粉搅拌均匀至无颗粒。

3.将玉米糊倒入(1)里,不停的搅拌至浓稠状。( 图1 )

6.最后再以Latik , 玉米脆片 / 烤香的干椰丝装饰即可。

Filipino Maja Blanca Mais

2 cups coconut milk  ( 1 cup = 250ml )
1/3 cup cornstarch
1 tsp condensed milk
1/3 cup fresh milk
1/3 cup caster sugar
1/2 cup whole sweet kernel corn
Latik , honey crumbled corn flakes or toasted grated coconut, for garnish

Method :
1. Pour the coconut milk in a sauce pan and bring to a boil. Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients diluted.

2.Simmer for about 10 min. on a low fire and keep stirring. Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted.

3. Pour the fresh milk and cornstarch mixture in a sauce pan and stir thoroughly. When the mixture reaches a thick consistency its already done. ( Picture 1 ) 

4. Pour the mixture in a container then slowly tap the container on the flat surface to flatten the mixture. And if using a silicon or non-stick 12-cup mini muffin pan fill each cup full.

5. Let it cool then refrigerate for at least 30 minutes or until set.

6. Garnish with your desired toppings and serve.
