海南鸡扒 ~ Hainanese Chicken Chop







我是海南妹,但海南料理从没做过,也没吃过。
这个海南鸡扒是我第一次的尝试。虽然酱汁煮到有点浓稠,但真的好好吃哦!

 
食谱取自 : Nasi Lemak Lover

海南

材料:
全鸡腿5只(去骨)
3汤匙 粘米粉
2汤匙

鸡腿腌制:
1汤匙 蚝油
1汤匙 生抽/ 酱油
1汤匙
1/2 茶匙 黑酱油
1 1/2茶匙
胡椒粉适量

 
酱汁材料:
2 洋葱 (切片)
160g 番茄酱
1汤匙 李派林喼汁
2汤匙
1 茶匙
1/2  汤匙 生抽/ 酱油
2  1/2
勾芡 ~ 1汤匙 木薯粉/ 玉米粉 + 5汤匙水,搅拌均匀

 
配料:
2 番茄 切块)
80g 冷藏青豆 灼熟
3 马玲薯  切块,炸至金黄色)

 
做法
1.鸡腿加入腌料拌匀,腌约 3 ~ 4小时或隔夜。

2.粘米粉和水搅拌均匀。将腌制好的鸡扒裹上面糊。烧热油,将鸡扒煎炸至熟和金黄色。备用。
                 


3.酱汁做法 :锅里烧热油,爆香洋葱片,加入水和其它酱汁材料 (除了勾芡的薯粉水)。煮至洋葱片变软,最后倒入薯粉水。

4 将鸡扒,马玲薯,番茄和青豆放在碟中,淋上酱汁,即可享用。

Hainanese Chicken Chop

Ingredients :
5 chicken thigh   deboned
3tbsp rice flour
2tbsp water

 
Marinate ingredients :
1tbsp oyster sauce
1tbsp light soy sauce
1tbsp sugar
1/2tsp dark soy sauce
1 and 1/2tsp salt or to taste
pepper

 
Tomato sauce ingredients:-
2 onions  ( sliced )
160g tomato ketchup
1tbsp Lea & Perrins Worcestershire sauce
2tbsp sugar
1tsp salt or to taste
1/2 tbsp light soy sauce
2  1/2 cups water
Thicken mixture- mix 1tbsp tapioca flour or corn flour with 5tbsp water, to thicken the sauce

Other condiments :
2 tomatoes, cut into wedges
80g frozen green peas ( blanch in hot water )
3 potatoes ( cut into wedges , then deep fry till golden brown )

 
Method:
1. Marinate the chicken thighs with marinating ingredients, for 3-4 hours or overnight .

2. Add rice flour and water into marinated chicken thighs and coat it well. Then deep fry till golden brown. Dish up and set aside.

3. To prepare the tomato sauce, heat oil in a wok or saucepan, sauté onion till aroma, add in water and the rest of seasonings except thicken mixture, cook for few minutes or till onion is soften. Then thicken the sauce with thicken mixture.

 4. To serve, arrange the deep fried chicken thigh, cooked green pea, potato wedges and sliced tomatoes on a plate. Pour the hot tomato sauce over and serve. Re-heat the tomato sauce before serve if you are not intended to serve immediately.
