马来香料炸鸡
材料 :
600g
鸡肉3大匙 肉类咖喱粉
1大匙 盐
1根 咖喱叶 ( 取叶 )
腌料 :
90g
小葱头5瓣 蒜头
120g 生姜
4公分 蓝姜
2枝 香茅
2大匙 芫荽籽 ( 我用芫荽粉 )
1小匙 小茴香 ( 我用小茴香粉 )
3大匙 食油
30ml 清水
做法 :
1.
先把所有腌料用搅拌机捣烂至滑,取出备用。腌制大约30分钟。
2.
鸡肉斩成适宜块状,加入捣烂之腌料,咖喱粉和咖喱叶,拌均匀后放置腌制2 ~3小时。
3.
把鸡块放入热油中以大火炸熟呈金黄色,捞起沥除油分。即可食用。

Spiced Fried Chicken ( Ayam Goreng Berempah )
Ingredients
:
600g
chicken meat3tbsp meat curry powder
1tbsp salt
1 stalk curry leaf ( leaves only )
Marinade
:
90g
shallots5 garlic cloves
120g fresh ginger
4cm fresh galangal
2 stems lemongrass
2tbsp coriander seeds ( I used coriander powder )
1tsp cumin ( I used powder )
3tbsp cooking oil
30ml water
Method
:
1.
Place marinade ingredients into food processor and pound it into smooth paste ,
dish out and leave aside .
2.
Cut chicken into small pieces , season with pounded marinade , curry powder and
curry leaves , mix well . Marinate for 2 ~ 3 hours .
3.
Deep-fry the marinated chicken pieces into hot oil over high heat until golden
brown . Remove from heat and drain well . Serve .
