泡菜鲜肉饺 ~ Meaty Kimchi Wantan

 





食谱取自 新新饮食 @80

泡菜鲜肉饺

材料:
1大匙油
1小匙蒜茸
肉碎  150g  ( 拌入材料A,搅拌均匀 )
泡菜 150g 剁碎
2大匙 美奶滋
30片云吞皮
1 粒蛋白( 封口用)
3杯炸油

材料 A :
1小匙生抽
1/2小匙麻油
1/4小匙胡椒粉
1/2小匙粟粉

 
做法
1.烧热油,爆香蒜茸,加入肉碎炒香。

2.加入泡菜炒至均匀及干,盛起待冷,加入美奶滋拌匀,试味。 ( 1 )

3.将1小匙泡菜馅放在云吞皮中间,用手指将蛋白涂抹在云吞皮四周,如图般折起。( 2 )

4.烧热炸油,用中火将云吞饺炸至金黄色,捞起沥干油份。
5.排放在碟中,趁热享用。

Meaty Kimchi Wantan

Ingredients :
1 tbsp oil
1 tsp chopped garlic
150g minced meat ( mix well with ingredient A )
150g Kimchi ( chopped )
2 tbsp mayonnaise
30 pieces wantan skin
1 egg white ( for sticking the sides )
3 cups oil for deep-frying

Ingredients A :
1 tsp light soy sauce
1/2 tsp sesame oil
1/4 tsp pepper
1/2 tsp cornflour



 
Method :
1. Heat up oil , sauté chopped garlic till fragrant , add minced meat and stir-fry till aromatic .

2. Add kimchi and stir to cook till dry and well mixed . Dish up and leave to cool before mixing in mayonnaise . Taste . ( Picture 1 )

3. Put 1 tsp kimchi filling in the center of wantan skin , use finger to brush some egg white onto the sides of the wantan skin , wrap up as shown in the pictures . ( Picture 2 )

4. Heat up oil for deep-frying , deep-fry wantan using medium heat till golden brown . Dish and drain .

5. Arrange onto a serving plate and serve hot .
