居鑾月餅 ~ Copycat Kluang Mooncakes


食谱参考 :Nasi Lemak Lover


175g 牛油 室温
50g 炼奶
255g 普通面粉
1  蛋黄
400g 白莲蓉馅
8 咸蛋黄 涂上少许米酒,蒸5 ~ 10分钟

扫面- 1粒 蛋黄 + 1tsp 牛奶  ,搅拌均匀。

1. 将牛油及炼奶打均匀。加入蛋黄继续搅拌至均匀。 1

2. 加入面粉,搅拌成一个不黏手的软面团。

3. 将馅料分成4等份(每份100g),加入2粒咸蛋黄,揉成橄榄型。

4. 把面团也分成4份,一份大概110g。将馅料包在面团里,揉成橄榄形。 2

5. 用叉子在月饼上划上几条线。然后涂上蛋黄液。

6. 放入已热好的烤箱里,以170度烤约25~30分钟,即完成。

Kluang Mooncake

Ingredients : ( makes 4 )
175g butter room temp
50g condensed milk or sweetened creamer
255g plain flour
1 egg yolk
400g white lotus paste or your choice of paste
8 salted egg yolks (brush with rice wine, steam for 5-10mins)

Egg wash- 1 egg yolk +1tsp milk or water

1. Cream butter and condensed milk till light Add in egg yolk, and beat until combine. ( Picture 1 )

2. Mix in flour, mix till become a soft and not sticky dough.

3. Fill two egg yolks with lotus paste (100g each) and shape like a rugby ball.

4. Then wrap the lotus paste with pastry (110g each) and also shape like a rugby ball. Place on a lined baking tray. ( Picture 2 )

6. Use a fork to draw few lines on the top of mooncake. Egg wash the mooncake.

7. Bake at a pre-heated oven at 170C( fan forced) for 25-30mins.
