白咖啡燕菜月饼 ~ White Coffee Jelly Mooncakes


 
 


 
 
刚刚在网购败了3个塔形燕菜模就迫不及待的做了今年的第一个燕菜月饼,我最爱的白咖啡.这个塔形燕菜模美到不的了,我很喜欢哦!哈哈。。。

白咖啡燕菜月饼

材料A( 份量: 5 ~ 6个大的 )
燕菜蛋黄
200g 清水
1茶匙 燕菜粉
30g 
1 红萝卜 (蒸熟,压成泥

材料B
牛奶内馅
300g 鲜奶
5g 燕菜粉
40g 奶油芝士 ( 切小块 )

材料C
白咖啡外皮
60g 2 )即溶白咖啡粉  + 热水 2杯(500g, 搅拌均匀
炼乳 细砂糖 1汤匙(如果需要)
7g燕菜粉

做法 :
1. 先将材料(A)煮滚,然后放进球形模子里,待凝固。做出蛋黄。

2. (B)的材料放进锅子里煮至奶油芝士溶解和滚,熄火,过滤倒入合适的小杯子。然后放入一颗(1)的蛋黄燕菜,待凝固备用。

3. (C)的材料煮滚,然后过滤。(去掉泡泡)

4. 倒入少许的白咖啡燕菜水在大月饼模里,等待稍微凝结,就放入一个杯子里的鲜奶蛋黄馅。最后将剩下的白咖啡燕菜液把模子填满即可。

5。把冷后的燕菜放入冰箱里等待凝固,2个小时后即可脱模切开享用。

White Coffee Jelly Mooncakes

Ingredients A : ( makes 5 ~ 6 mooncakes )
For the egg yolk
200g water
1tsp agar-agar powder
1 carrot ( steamed and mashed )

Ingredients B :
For milk filling
300g fresh milk
5g agar-agar powder
40g cream cheese ( cut into small cube )

Ingredients C :
For the white coffee jelly skin
60g x 2 packets instant white coffee + 2 cups hot water ( 500g) , mix until well  combine .
1tbsp condensed milk or sugar
7g agar-agar powder

 
Method :
1. Combine ingredients A into a pot , bring to boil . Pour into ball shape mould . Cool then keep chilled till set . Unmould jelly egg yolks when needed .

2. Bring ingredients B to boil  and till cream cheese melted . Turn off heat , strain the mixture and pour into small cup / bowl . Let it set a little , gently place in 1 piece of egg yolk .  

Keep chilled till set .

3. Bring ingredients C to boil  . Turn off heat and strain the mixture .

4. Pour some coffee mixture into mooncake mould , let it set a little . Use fork gently draw lines at the surface of the jelly , then place in the filling  . Pour the coffee mixture again until full . Set before chilling mould into the refrigerator .
