椰子果冻 ~ Coconut Jelly


食谱取自 椰子椰子我爱你


材料 :
2 青椰
200ml  清水
10g  燕菜粉
1/2 茶匙  香草精  ( 我用2片打结了的班兰叶 )

1. 将青椰顶部切开,倒出椰水后刮出椰肉. 将椰肉切成小块备用 .

2. 将椰水滤入锅中,加入清水和班兰叶煮沸 . 将糖和燕菜粉倒入碗内拌匀,然后倒入煮沸的椰水中,拌煮至糖完全溶化 . 加入香草精拌匀(我没加入香草精 .

3. 将椰肉舀入果冻杯内,然后倒入燕菜混合物,搁旁定型. 放入冰箱冷藏即可.

Coconut Jelly

Ingredients :
2 young coconuts
200ml water
250g sugar
10g agar-agar powder
1/2tsp vanilla essence ( I replaced it with 2 blades knotted pandan leaves / screwpine leaves  )

Method :
1. Remove top of young coconuts , pour out the coconut water and scrap off coconut flesh for later use . Cut coconut flesh into small pieces . Set aside .

2. Strain coconut water into a pot , add water , pandan leaves  and bring to boil . Mix sugar with agar-agar powder in a bowl , stir into boiling coconut water and stir until sugar is completely dissolved . Add vanilla essence and mix well  ( I omit it  ) .

3. Scoop coconut flesh into each jelly cups  . Fill each cups with agar-agar mixture and leave aside to set  . Keep in the fridge before serving .
