英式柠檬蛋糕
我用6吋圆形模
蛋糕体 :
原味海绵蛋糕粉 130g
蛋2粒(A型)
鲜奶/水30g(随意自选一个代替)
粟米油 30g
柠檬醤
(A ) :
鸡蛋 2粒
幼糖 60g
柠檬汁 65g
柠檬皮屑 1粒
(B ) :
牛油 45g打起植物鲜奶油 150g
1. 在圆形模里铺上蛋糕纸。预热烤炉170度.
2. 将海绵蛋糕混合粉, 鸡蛋和鲜奶。全部放入搅拌碗中。用低速度搅拌均匀成糊狀。再转高速度,打至面糊呈乳白状。可用面糊写成"0"字而保持10秒不变。
3. 加入粟米油。用塑胶刮板轻轻往同一方向搅拌均匀既可。
4. 倒入圆形模中,放入预热烤炉,烤约30至35分钟。
5. 把蛋糕移置在铁架,待冷却,横切3片。
1.把(A)全部材料倒入小锅里混合,用双烤盘热水上搅煮至松发,然后将它过滤后。
2.小锅再放回双烤盘热水上,加入(B)续搅煮至浓稠。
3.离火,待冷却备用。
4.盖上保鲜纸。
1.把一片蛋糕体放在底部,抹上一些柠檬醤在蛋糕片上,再铺上一层打起植物鲜奶油。
2.再盖上第二片蛋糕体,再將柠檬醤搽在蛋糕片上,再铺上一层打起植物鲜奶油。重复第三片蛋糕体叠完。
3.装饰随意。
English Lemon Gateau
6” round loose mould
For the cake :
sponge cake mix 130g2 A size eggs
fresh milk / water 30g
corn oil 30g
For the lemon curd
(A) :
2 eggs
sugar 60g
lemon juice 65g
zest of 1 lemon
butter 45g
For decoration :
whipped whipping cream 150g1. Line 6” mould with baking paper . Preheat the oven to 170c .
2. In a bowl add in sponge cake premix , eggs and milk . Beat at low speed until all well combined and turn to high speed . Beat until light and fluffy .
3. Add in corn oil , mix well with spatula in one direction .
4. Bake for 30 ~ 35 minutes.
5. Remove
and let it cool . Cut it into 3 pieces .
1. Whisk eggs, sugar, lemon juice and lemon zest in a double boiler over simmering water until mixed well, then continue to stir until thick, 7 to 10 minutes.
2.Drain through a mesh sieve to get rid of lumps. Fold in butter , double boil again until butter are melted . Cover curd with wrap cling . Set aside .
1. Place one cake layer on a cake plate. Spread
some lemon curd at the cake and spread 1/4 of the whipping cream over the top.
2. Place the second layer of the cake on top of the cream . Repeat step 1 until all are done .
3. Decorate the top of the cake with whipping cream and the remaining lemon curd or use any design you like .
