酱烧茄子煲 ~ Chili & Garlic Eggplant

酱烧茄子煲

材料:
茄子 2条(切条)
蒜头 3瓣( 切片)
嫩姜 10g (剁碎 )
豆酱 1/2汤匙
辣豆瓣酱 1汤匙
肉碎 100g
红辣椒碎 1
青葱 1棵(切段)

 
调味料:
蚝油  1/2汤匙
生抽  1/4汤匙
 1/2茶匙
麻油1茶匙
绍兴酒 1 汤匙
水适量

做法
1 将茄子以热油泡一泡捞起,沥油备用。

2.留油1汤匙爆香蒜片,姜茸,加入豆酱及豆瓣酱炒香。

3.加入肉碎和调味料拌炒至肉碎转色。

4.加入茄子,红辣椒碎和青葱段略炒均匀便可。

Chili & Garlic Eggplant

Ingredients :
2 eggplants ( cut into strips )
3 pips garlic ( sliced )
10g young ginger ( chopped )
1/2tbsp soy bean paste
1tbsp chilli soy bean paste
100g minced meat
1 red chilli ( chopped )
1 stalk spring onion  ( cut into blocks )

Seasonings :
1/2tbsp oyster sauce
1/4tbsp soy sauce
1/2tsp sugar
1tsp sesame oil
1tbsp ShaoXing wine
some water

 
Method :
1. Blanch eggplant in hot oil and drain .

2. Keep 1 tbsp oil in wok , sauté garlic , ginger , soy bean paste and chilli soy bean paste until fragrant .

3. Add in minced meat and seasoning , stir-fry until colours turns brown .

4. Add in eggplant , red chilli and spring onion , stir to mix , dish out and serve with rice .
