叁巴辣椒酱
材料( 捣烂成泥 ):
大葱 4颗
蒜头 3瓣
南姜 3cm
嫩姜 3cm
食油 1/2小杯
辣椒干 10条
马来盏 1茶匙
虾米碎 5大匙
调味 :
盐 1茶匙糖 3大匙或个人喜好
1.烧热油, 下虾米碎炒香后加入所有其余材料。
2.大火翻炒直油分隔 (大概15分钟左右)。
3.最后加入调味料, 炒片刻即可享用。

Home-made sambal
Ingredients ( blend to fine paste ) :
4 onion
3 cloves garlic
galangal 3cm
ginger 3cm
1/2cup cooking oil
10 dried chillies
belacan 1tsp
chopped dried shrimp 5tbsp
Seasoning :
salt 1/2tsp
sugar 3tbsp or adjust to taste
Method :
1. Heat pan with some oil , sauté dried shrimp until fragrant then add in other ingredients .
2. Continue stir at high heat till oil separated from chilli .
3. Add in seasoning , continue stir-fry for a few minutes .
