柠檬酱
(约做出250ml柠檬酱)
材料 :
2粒 鲜榨柠檬汁和柠檬皮屑 (柠檬汁约100g)
250g白砂糖 (怕酸的可多加点白砂糖)
2个 全蛋,打散 (约65g一个)
75g 牛油
1. 将柠檬汁和白糖放入一小锅里,隔水把柠檬汁及白糖搅匀致糖融化。
2. 离火,慢慢把蛋液加入搅匀,加入柠檬皮屑。再把锅隔水不停搅拌至浓稠(大约12分钟). ( 我用小火煮至浓稠 ) .
3. 过滤柠檬酱,加入牛油搅致融化。倒入干净的玻璃容器中,冷却后就可以放入冰箱。
材料 :
适量 蓝莓,草莓 (草莓切小)
2-3 茶匙 柠檬酱
适量 打发植物性奶油 ( 我用动物性奶油 )
适量 开心果碎 (我用巧克力米)
做法:
1. 将约2茶匙饼干碎加入小玻璃杯中,加入2-3茶匙柠檬酱,放点蓝莓及草莓粒在上面,再就挤入打发的奶油。
2. 最后放点开心果碎或饼干碎装饰在奶油上面就完成了。
3. 做好的柠檬酱甜点杯再送入冰箱约1个小时让奶油和柠檬酱更凝固。
Lemon curd
(makes about 1 cup/250ml)
Ingredients:
zest and juice of 2 lemons (about 100g)250g granulated sugar, or add to your taste
2 eggs (65g each)
75g Butter
Method:
1. Bring water to boiling point and and keep water at low heat. Combine lemon juice and sugar in a pot under double boiler and stir until sugar dissolved.
2. Remove lemon juice from heat. Crack eggs
into a separate bowl or cup, lightly beaten and stir in the eggs a little at a
time until combined and add lemon zest into it. Bring the pot back under double
boiler and stir continuously for 5-6 minutes (mine was around 12 minutes),
until thickened. ( I cooked it at low heat until thickened ) .
3. Strain the hot cream and stir in butter till
butter melted and mix well . Pour into clean jar and allow to cool before
putting it in the fridge.
Ingredients :
adequate biscuit crumbs ( I replaced it with left over crumbs )
some blueberries and strawberries (cut strawberries to small pieces)
2-3tsp lemon curd for one serving
fresh topping cream (whisk to peak form)
1. Add about 2 spoons of biscuit crumbs into a small glass followed by the lemon curd. Place some blueberries and strawberries on to it and finish with whipped cream.
2.Top with some chopped pitaschio or biscuit
crumbs. Place the glass back to the fridge and chill for about an hour before
serving.
