蒸香汁番茄鸡腿 ~ Chicken Drumstick with Spicy Tomato Sauce

蒸香汁番茄鸡腿

材料:
2 鸡腿
适量疯柑叶丝
100ml  清水

腌料:
1/4  茶匙
1/2 小匙 柠檬汁

香汁番茄酱材料:
2大匙 橄榄油
50g 洋葱 (切片)
200g 番茄 (切粒
30g 红辣椒 (去籽,切粒)
1片疯柑叶 (切丝

调味料:
1 小匙 柠檬汁
1/2 小匙
1小匙

做法
1.鸡腿加入腌料涂末均匀,腌2小时。

2.准备香汁番茄酱 :锅里烧热2大匙橄榄油,加入洋葱炒至软化,放入番茄粒,辣椒粒和疯柑叶丝炒香浓后,注入清水,大火煮沸。加入调味料拌匀,离火。

3.把酱汁淋上鸡腿上,盛入预热蒸炉,盖上,大火蒸15 ~ 20分钟至鸡腿熟透,盛起,撒上少许疯柑叶丝,以番茄装饰即可上桌。

Chicken Drumstick with Spicy Tomato Sauce


Ingredients :
2 chicken drumsticks
some shredded kaffir lime leaves
100ml water

Marinade :
1/4 tsp salt
1/2 tsp  lemon juice

Spicy tomato sauce :
2tbsp olive oil
50g big onion ( sliced )
200g tomatoes ( diced )
30g red chillies ( seeded , diced )
1 blade kaffir lime leaf ( shredded )

Seasoning :
1 tsp lemon juice
1/2 tsp sugar
1 tsp salt

Method :
1. Marinated the chicken with marinade ingredients for 2 hours .

2. To make sauce :  Heat up 2tbsp olive oil in a saucepan to sauté onion until soft and fragrant . Add in tomatoes , red chillies and kaffir lime leaves, stir-fry until aromatic . Add water and bring to boil , mix in seasoning .Remove from heat .

3. Add sauce mixture over the marinated chicken drumsticks in a steaming plate . Put in a preheated steamer , covered and steam over high heat for 15 ~ 20 minutes till cooked . Remove and garnish with shredded kaffir lime leaves and tomato wedges . Serve hot .
