绿茶月饼 ~ Green Tea Mooncake




 
前几天闲来无事,又翻看Alan Ooi 的花前月下。无意中被我发现了这个蛮特别的月饼 ~ 巧克力咖啡月饼。巧克力口味的烤皮+ 咖啡莲蓉馅 +奶油芝士 , 应该很好吃吧
由于我家没有巧克力/可可粉和咖啡莲蓉馅,所以就用了绿茶粉+ 豆沙馅。

食谱取自 :花前月下
 

绿茶月饼

材料 A ( 月饼皮 )
225g  普通面粉
35g 巧克力粉 / 可可粉  ( 我用1 ½大匙 绿茶粉 )
170g 糖浆
50g 花生油
1 茶匙 碱水
1/8 茶匙  苏打粉

材料B ( 馅料 ) :
900g 莲蓉馅  我用豆沙馅
450g  奶油芝士

 
做法:
1. 月饼皮:将所有材料(A)混合拌均匀,放置旁30分钟,把面团分成每分45g
               

2. 馅料:将莲蓉馅分成每分90g. 奶油芝士分成每分45g . 将莲蓉馅压扁,裹入奶油芝士。备用。

3. 将饼皮团裹馅料,搓圆后压入月饼模里,扣出排在烤盘上。
                  


4. 盛入预热烤炉200度,烤10分钟,取出放置一旁待冷,约10-15分钟,再放入烤炉继续10-15分钟至熟
 

提示
~ 此月饼每粒重量180g ( 饼皮45g 莲蓉馅90g , 奶油芝士45g )
~ 我的月饼模是125g ( 饼皮30g 莲蓉馅55g , 奶油芝士40g )

Green Tea Mooncake

Ingredients A ( mooncake pastry ) :
225g plain flour
35g chocolate powder / cocoa powder ( I replaced with  1 1/2tbsp green powder )
170g golden syrup
50g peanut oil
1tsp alkaline water
1/8tsp baking soda

Ingredients B ( fillings ) :
900g lotus seed paste  ( I replaced it with red bean paste )
450g cream cheese 

 
Method  :
1. Mooncake pastry : Mix ingredients A till well combined .Set aside for 30minutes . Divide into 45g each .

2. Fillings : Divide lotus seed paste into 90g each .Divide cream cheese into 45g . Flatten lotus seed paste and wrap in cream cheese . Set aside .

3. Wrap fillings with mooncake pastry . Roll into balls . Press it into mooncake mould . Tap lightly to de-mould .

4. Bake in preheated oven at 200c for 10 minutes . Remove and leave to cool  , for about 10 ~ 15 minutes . Bake again in oven for 10 to 15 minutes until cooked .

 
Note :
~ Each of this mooncake weight 180g ( pastry 45g , lotus seed paste 90g and cream cheese 45g )
~ I’m using 125g mooncake mould  (  pastry 30g , lotus seed paste 55g and cream cheese 40g )
