公仔饼 ~ Moon Biscuits



久违了的公仔饼 有没有勾起你小时的回忆呢

食谱取自 新新饮食@91


300g 普通面粉
240g 糖青
75g 花生油
1/2小匙 碱水

 1粒 蛋黄 (打散 + 1汤匙 鲜奶,搅拌均匀后过滤


2.将粉团分成25g的小团,用模按出花纹,排在烤盘里。( 我用鱼形木模,1 = 30g )

3.放入已预热的烤箱里,以170c 8 ~ 10分钟,取出待冷一会儿(大约10分钟后),涂上蛋液,再烤多15 ~ 20分钟即可。

Moon Biscuits

Ingredients :
300g plain flour
240g mooncake syrup
75g peanut oil
1/2tsp alkaline water

1 egg yolk ( beaten , for glazing ) + 1tbsp fresh milk ,  mix until well combined and strain .

Method :
1. Combine all ingredients and mix into a dough . Cover with a piece of damp towel and rest for 2 hours .

2. Divide dough into small parts , about 25g each . Press into mooncake mould and knock out . Arrange onto a baking tray . ( I used fish wooden mould , about 30g each )

3. Bake in the preheated oven at 170c for 8 ~ 10minutes . Remove and leave to cool slightly  . Glaze with beaten egg and bake for  another 15 ~ 20minutes . Remove and leave to cool on wire rack .
