红烧排骨 ~ Red-braised Spare Ribs



 
 
 
食谱取自 我家男人爱煮菜

红烧排骨

材料:
600g 排骨
1 青葱 洗净,切段)
8 老姜
500ml清水

腌料:
1汤匙 生抽
1汤匙 粟粉


调味料:
2汤匙生抽
2汤匙 绍兴酒
1茶匙  黑酱油
30g 冰糖

芡汁 (混合均匀
2茶匙 木薯粉
1汤匙 清水

做法
1.把排骨洗净,沥干,加入腌料腌1小时。

2.烧热适量油把排骨炸至微黄即可盛起,沥干油。

3.烧热1汤匙油,爆香老姜片和葱段,然后加入(2)炒香。 1

4.注入清水和调味料煮至滚,调小火候焖30分钟。调大火候,勾芡后即可盛起。

Red-braised Spare ribs

Ingredients :
600g spare ribs
1 stalk spring onion (cut into sections )
8 slices old ginger
500ml water

Marinade :
1 tbsp soy sauce
1 tbsp cornflour

Seasoning :
2 tbsp soy sauce
2 tbsp “ShaoXing “ wine
1 tsp dark soy sauce
30g rock sugar

For thickening ( mixed together ) :
2 tsp tapioca flour
1 tbsp water

Method :
1. Rinse ribs , drain well . Coat with marinade for 1 hour .

2. Heat oil to deep-fry spare ribs till pale golden. Remove , drain off excess oil .

3. Heat a clean wok with 1tbsp oil , sauté old ginger and spring onions . Next , add in no.(2) , fry till aromatic . ( Picture 1 )

4. Add in water , seasoning . Let it come to a rapid boil , turn heat to low for 30 minutes . Turn to high heat , add in thickening . Mix well and dish up .
