材料:
可丽皮 :2杯 面粉
2杯 淡奶
1 1/2杯 水
3/4 杯 溶化牛油
6粒 蛋黄
1/4 杯 细砂糖
盐适量
酱汁 :
3 杯 淡奶油1 1/2杯 细砂糖
6粒 蛋黄
3/4杯 杂果糖浆
1 汤匙香草精
1/2 汤匙 肉桂粉
馅料:
3罐 杂果 ( 沥干水分 )
做法 :
1. 可丽皮 : 面粉,淡奶和水搅拌均匀直到无颗粒。然后加入其余材料,搅拌至幼滑。烧热不粘锅,涂少许奶油,舀入适量的面糊 ( 我的大概50ml ),旋转使表面均匀。以小火煎,只需翻转1次.煎好即取出放在布上冷却。重复步骤至材料用完。
2. 酱汁:淡奶油和半杯的细砂糖打至硬性 。 在另一个碗里把蛋黄打至乳白色。加入剩余的细砂糖和杂果糖浆。 以中火煮至浓稠状 ( 大概3分钟,要不停的搅拌哦!)。待冷。倒入已经打发的淡奶油里。再加入香草精和肉桂粉。
3. 在烤盘里铺上一层可丽皮,然后加入适量的杂果馅料和酱汁。然后再叠上一片可丽皮,酱汁和杂果。放入预热的烤箱以上火烤至表面呈金黄色。
Fruit crepe
Ingredients :
For crepe :
2 cups All purpose flour
2 cups evaporated milk
1 1/2 cups water
3/4 cup melted butter
6 pcs egg yolk
1/4 cup sugar
For sauce :
3 cups all purpose cream ( chilled )1 1/2 cups sugar
6 pcs egg yolk
3/4 cup fruit cocktail syrup
1 tbsp vanilla extract
1/2 tbsp ground cinnamon
For filling :
3 cans Fiesta Fruit Cocktail ( drained , reserve syrup for sauce )
1. For crepe : Mix flour, milk and water until flour is dissolved. Add remaining ingredients and dash of salt. Mix until smooth. Brush a non stick 8" pan with oil. Pour a thin layer (¼ cup at a time) of batter in pan then tilt to cover bottom. Cook each side for 1 minute. Do the same with the remaining batter. Set aside.
2. For sauce: Whip cream for 2 minutes. Add half of sugar and continue beating until stiff. Set aside. Beat egg yolks until fluffy. Add remaining sugar and fruit cocktail syrup. Cook over low heat, while stirring continuously for 3 minutes or until just thicken. Cool. Fold in cream, vanilla and cinnamon. Set aside.
3. Layer baking pans with half of crepes. Top with part of fruit mixture then spread with some sauce. Cover with remaining crepes , sauce and fruit mixture . Bake in oven toaster for 4-5 minutes or until brown on top.
