金瓜米粉~ Pumpkin vermicelli






 
 
食谱取自 食尚品味 ,  Oct/ Nov 2013

金瓜米粉

材料:
南瓜   300 ~ 400g
米粉   300g
小虾米干   300g
绞肉   200g
青葱    20 g,切段
食油   3汤匙
高汤  2

调味料:
  1茶匙半
胡椒粉   2茶匙

做法

1.南瓜去皮,切细丝或用刨刀刨成丝。

2.米粉洗净,泡软沥干。备用。

3.起油锅,爆香葱段和虾米,加入绞肉炒熟,再放入南瓜丝,高汤和调味料。
                 
 

4汤滚即放入米粉,拌炒至南瓜软化,与米粉均匀贴合即可。

Pumpkin vermicelli

Ingredients :
pumpkin  300 ~ 400g
rice vermicelli  300g
dried shrimps  300g
minced meat  200g
spring onion 20g , sectioned
cooking oil  3tbsp
stock  2 bowls

 
Seasoning :
1   1/2tsp salt
pepper 2tsp

 
Method :

1.  Skin pumpkin , then cut into thin shreds .

2. Wash vermicelli and soak until soft . Drain and set aside .

3. Heat oil in a wok  . Saute spring onion and dried shrimps till fragrant . Add minced meat and fry until cooked . Add pumpkin shreds , stock and seasoning  .

4. Once boiling , add vermicelli to stir fry till pumpkin softens and sticks to the vermicelli evenly .
