土耳其比萨 ~ Turkish Minced Meat Pita ( Kiymale Pide )

土耳其比萨

饼皮材料:
面粉 125g
20g + 1/2 茶匙 速发酵母(搅拌溶解)
原味优格 20g
牛奶 20g
1/4 茶匙
1 茶匙
橄榄油 1 汤匙

饼皮做法

1.把全部材料混合在一起,搓揉均匀成一个光滑面团,然后盖上保鲜纸,室温放置2个小时,让面团发成2倍大。

 
馅料:
瘦猪肉碎 100g
番茄 1粒(去籽切小丁)
洋葱碎 2汤匙
巴西利 2 汤匙 (我用芫茜代替)
 1
甜椒粉  1/4 茶匙
1/4 茶匙
黑胡椒粉 少许

 
馅料做法

1.把全部馅料混合均匀(除了鸡蛋),然后放在筛里,滴干水份。

做法:

1.烤箱预热 200c

2. 把发酵好的面团,擀成一个长椭圆形,约5mm厚度,把面团放在铺了烤纸的烤盘上,把馅料铺在面团上,周围留约一寸宽的空隙。

                


 


 


3. 把一寸宽的空隙折上,两端部分粘紧,把鸡蛋打散加入在肉馅面上。

4. 30分钟,烤好后,取出,面团扫上橄榄油,即可。

 


Kiymale PideTurkish Minced Meat Pita

For the dough  :
125 g plain flour
water 20g +  1/2 tsp dried yeast ( dissolve yeast with water  )
natural yogurt 20g
milk 20g
salt 1/4tsp
sugar 1tsp
olive oil 1tbsp

Method :

1. Combine all ingredients and knead for 2 minutes by hand . Covered and leave to proof for 2 hours .

 
Filling :
minced meat ( beef / lamb or pork )  100g
1 tomato , seeded and cut into small cubed
1 onion  , diced
handful of fresh parsley ( I used coriander leaves )
1 egg
paprika 1/4tsp
salt   1/4tsp
black pepper to taste

 
Method :

1. Combine filling ingredients together ( except egg ) and let it sit on a colander so that excess water will drip away .

 
Method :

1. Preheat oven at 200c .

2. Roll the dough into a longish oval , about 5mm thick . Put the dough onto a piece of non-stick baking paper . Put filling onto the dough leving 1 inch border .

3. Fold  the edges of the pide inwards  like a boat ( see picture above ). Crack the egg in .

4. Cook the pide in preheated oven for 30 minutes . Brush the crust with olive oil and serve .
