豆浆仙草燕菜月饼 ~ Soya milk jelly mooncakes

豆浆仙草燕菜月饼

食谱取自  Anncoo Journal  & Aunty Young

燕菜蛋黄材料:
1茶匙燕菜粉
40克幼糖
1/8茶匙盐
150毫升水
100克红萝卜,切块后煮熟,打成泥

 
仙草内陷:
250克水
3 1/2 汤匙糖
1茶匙燕菜粉
2叶班兰叶
100克仙草(未加糖),切条状或用100克加糖仙草,切条状,糖减至1汤匙+ 1茶匙(大约20克)

 
豆浆外皮:
500克低糖豆浆
125克鲜奶
45克糖
2茶匙燕菜粉

 
做法:

燕菜蛋黄的做法 :

1。将所有燕菜蛋黄材料,倒入锅里煮滚,熄火过滤后,倒入制作冰块的小圆模内,待凝固扣出。

 
仙草内馅的做法 :

1 用小过燕菜月饼模子的圆形朔料杯子。

2 用中火把水,糖,燕菜粉和班兰叶煮开。

3。不停搅拌至滚,然后关火,拿掉班兰叶。 加入仙草条,继续搅拌1分钟。

4 将煮好的仙草液分别倒进6个朔料杯子至半杯满,稍冷后,塞入一粒燕菜蛋黄,然后将剩余的仙草液倒入至掩盖燕菜蛋黄,最后收进冰箱15分钟使之凝固。

 

豆浆外皮做法 :

1。将所有材料放进一个煲,以中火煮滚。需不停搅拌,以免烧焦。

2 关火后,继续搅拌1分钟。

3 倒豆浆液入燕菜月饼模子至半模满。 用刀子轻刮凝固了的仙草燕菜,这样两者才能互相粘在一起。

4 把一块仙草燕菜,放入已半凝固的豆浆燕菜上,然后再倒入另一半的豆浆液至掩盖整个燕菜月饼模子。

5 待稍冷后,收进冰箱凝固即可享用。
 
 

Soya Milk Jelly Mooncakes
 
Ingredients :
Jelly egg yolk :
1tsp agar-agar powder
40g caster sugar
1/8tsp salt
150ml water
100g carrots (cubed,steamed until soft and mashed)

 
Grass Jelly Filling :
250g Water
3 1/2 tbsp Sugar
1 tsp Agar agar powder
2 Pandan leaves
100g Grass Jelly - (unsweetened), cut to strips  OR use 100g Grass Jelly - (sweetened), cut to strips - reduce sugar to 1 tbsp + 1 tsp (about 20g)

 
Soya Milk Jelly :
500g  Soya Milk (reduced sugar)
125g  Fresh milk
45g  Sugar
2 tsp Agar agar powder

 
Methods :

Jelly egg yolk :

1. Boil all ingredients,sieve and pour into mould. Keep in the refrigerator until solid,then remove from mould.

 
Grass Jelly Filling :

1. Prepare round plastic cups smaller than the jelly mould.

2. Boil water, sugar, agar agar powder and pandan leaves together in a pot at medium heat.

3. Keep stirring mixture until the liquid has boiled. Discard pandan leaves and remove from heat. Add grass jelly strips and stir for another minute.

4. Pour the grass jelly mixture into the plastic cups until half full. Leave to cool for awhile until partially solid,then put in prepared jelly egg yolk. Pour in the rest of the mixture until it covers the jelly egg yolk.

5. Leave to set in fridge until solid(about 15 minutes).

 
Soya Milk Jelly :

1. Mix all ingredients in a pot, bring to boil at medium heat. Keep stirring when on the stove to prevent burning.

2. Remove from heat and stir for another 1 minute.

3. Pour the soya milk mixture into prepared moulds until half full. Gently scratch the solid grass jelly filling on the sides with a sharp knife. This will make the agar-agar jellies stick together.

4. Place one piece of grass jelly filling into each half filled mould, then fill the mould with the rest of the soya milk mixture.

5. Refrigerate jelly mooncakes. It can be served after it has set.
