材料:
豆腐 300g
鸡/猪绞肉 120g
全蛋 1粒
大洋葱 1/2颗 (切碎)
面包屑 半杯
上汤 300ml
李派林酱适量
番茄酱
太白粉 + 水(勾芡)
奶油
盐适量
黑胡椒粉适量1. 用厨房纸巾将豆腐包起来,用下微有重量的容器压在豆腐上。放置约15分钟以去除多余的水份。
2 . 洋葱炒熟待用。
3. 在碗中将面包粉以及剁碎的豆腐一起混合。将(2)的熟洋葱,全蛋液以及绞肉加入用手揉拌,至到绞肉开始出现黏稠性为止。
4. 取出适量的馅料,不断用手左右打成丸子后,整成3等份的圆汉堡,以中火将两面煎熟即可。
5. 加热另一个平底锅。倒入上汤,煮滚。再加入李派林酱和番茄酱。
6.最后以粟粉水勾芡。
7.取另一个平底锅并加热倒入适量的油,在大洋葱圈中,放入一颗蛋,以中火煎至熟。
8.依序将白饭,汉堡,太阳蛋盛在碗中。之后淋上酱汁即可享用。

Bread crumbs 1/2 cup

Worcestershire sauce
Tomato sauce
Cornstarch + water ( for thickening )

Method :
1. Use kitchen towel wrap tofu . Slightly press it with a heavy container for 15minutes in order to press out excess water.
2. Fry onion till fragrant .
3. In a bowl , mix bread crumbs and chopped tofu . Add
in onion , beaten egg and minced pork / chicken until well combined .
4. Used an ice cream scoop to scoop out fillings ( I
used hand ! ). Throw each portion once or twice against the palm of your hand
to expel air and make a more cohesive meatball. Fry each side until cooks and browned all over.
5. In another
frying pan , add in stock . Cook until boil and add in Worcestershire and
tomato sauce .
6. Then add in cornstarch water for thickening .
7. Using the pan used for frying the hamburgers , add
in cooking oil . Then add in onion ring and egg . Fry until cook one side .
8 . Assembly (bottom -> top): Rice -> Burger
-> Egg -> Gravy all over
