吐司虾球 ~ Prawn with cubed toast



 
 




 
 
吐司虾球

材料:
白吐司   10
豆腐     100g
中型虾  8
葱花    2大匙
红萝卜碎   2大匙
盐和胡椒粉适量

 
面糊材料:
蛋液   半颗份
太白粉    3大匙
料理酒   2大匙
盐适量

 

做法

1 用厨房纸巾将豆腐包起来,用下小微有重量的容器压在豆腐上。放置约15分钟以去除多余的水份。

2.预先将吐司切边,放在冷冻库中冰硬。切成小丁待用。

3.将虾子剁壳,留尾并去沙线。用刀子拍扁后,微剁碎。加入少许的盐和胡椒粉至黏稠状。

4.在容器加入剁碎的豆腐,虾浆和所有面糊材料,一起匀。然后加入葱花拌匀。

 
5.揉成丸子大小的小虾球,裹上(2)的吐司丁。

6.放入160c ~ 170c 的油,炸至金黄色即可。

 
** 将吐司放进冷冻库里冷冻,就可以切出一颗颗形状完整的吐司丁。

** 在裹上吐司丁的时侯,轻轻用手捏一下,帮吐司丁能贴紧着虾球。

** 吐司丁会很快焦,要特别注意炸油的温度。

 
Prawn with cubed toast

Ingredient :
Toast   10 slices
Tofu ( soft beancurd ) 100g
8 Medium size shrimp  
Spring onion  2 tbsp ( chopped )
Carrot 2tbsp ( chopped )
Salt and pepper


Batter :
Egg  ½
Cornstarch  3tbsp
Shaoxing wine  2tbsp
Salt

 
Method  :

1. Use kitchen towel wrap tofu . Slightly press it with a heavy container for 15minutes in order to press out excess water .

2. Toast put in freezer  and cut it into small cubed .

3. Shrimp remove shell  & deveined  , slightly chopped . Add in salt and pepper. Mix until well combined .

4. In a bowl  , add in minced tofu , shrimp and batter ingredients . Mix well , then add in chopped spring onion .

5. Make it into a ball , and coated with cubed toast .

6. Heat oil to 160c ~ 170c , deep-fry until golden brown .

 
** The purpose of freeze the toast is to make it more firm .

** When coated the cubed toast , use hand to gently mold it so that it will  stick to the ball .

** cubed toast will get burn very easily if the oil temperature is high  .
