泰式花生酱 ~ Thai style peanut sauce


泰式花生酱

材料:
椰浆    300ml
花生     100g ( 烤香 )
椰糖/黄糖      100 ~ 120g
鱼露     25ml
酸柑汁  25ml
辣椒糊   50g

 
做法
1.煮滚150ml 的椰浆。

2.将(1)(趁热)和花生用搅拌机打至幼滑。

3.椰浆和花生混合料倒入里,煮滚然后加入剩余的椰浆,椰糖/黄糖。不停搅拌,煮至糖溶。

4.加入辣椒糊,鱼露和酸柑汁搅拌均匀,煮至有点浓稠状。试味,如不够味,可以加少许鱼露/糖。

 

Thai style peanut sauce

Ingredients :
Coconut milk   300ml
Peanuts            100g  ( roasted )
Palm sugar / brown sugar    100 ~ 120g
Fish sauce        25ml
Lime juice         25ml
Chili paste         50g

 
Method :
1. Put 150ml of coconut milk in small pan , bring to boil .

2. Put the boiled coconut milk ( while still hot ) and roasted peanuts into the food processor , procese until fine and well combine .

3. Pour the coconut and peanut mixture into the pan , bring to boil then add the palm sugar and stir until sugar dissolve .

4. After the sugar dissolve , pour the chili paste , fish sauce and lime juice into the sauce , whisk until combine .Let the sauce boil until thicken a bit , adjust the taste by adding more sugar or fish sauce .
