牛油果沙沙酱 ~ Guacamole


 
 
鳄梨酱是南美洲阿兹特克文化里传统的调料,在墨西哥,几乎每家餐厅都会提供这个酱。而Avacado 又被称为牛油果,油梨,樟梨。这种果实盛产于墨西哥,中美洲和南美洲,属于被子植物门的樟科。因为它含油量很高,所以又有森林黄油的美称。虽然含油量很高,但所含的绝大部分脂肪属于不饱和脂肪酸(胆固醇含量很低),非常容易被消化吸收,非常适宜年老体弱者调养身体食用,同时,牛油果还具有高蛋白,搞能量和低糖份的特点,因此,在美洲国家,常常被用来当做主食使用。牛油果有很多种吃法,可以生吃,可以用来做饮料,可以帮助提升海鲜的味道,可以卷入寿司,可以做汤,等等等等。。在我喜欢的几种吃法中,首当其冲的就是这个guacamole,不需要煮,只要将几样简单的原材料混合在一起。天然食材的完美结合后,带来的好滋味让人一口接一口。。

这个guacamole 和我之前做的avocado mayo 口感不一样哦!
 
材料:
熟透的牛油果3
洋葱半个 (切小丁)
辣椒2 (切小丁)(我没放
番茄1个,
青柠檬 1
香菜 半把 , 切细末( 我没放
橄榄油2 茶匙 ( 我没放 )
黑胡椒,盐适量。

 
做法
1.将去核去皮后的牛油果搅成泥,但是这个过程不能使用搅拌机,因为搅拌机会破坏牛油果的细胞组织,影响口感和味道。(如果没有这种石磨,找一把叉子来捣碎牛油果也行

2.将准备好的材料混合倒入盆中,挤入柠檬汁。加入橄榄油。

3.盐和黑胡椒粉的份量依照个人的口味来添加(如果可以使用新鲜搅碎的黑胡椒会更好),每个人的口味都不同,但是建议不要调味太重,这样牛油果的天然味道就会被盖掉,况且吃太多的盐对身体也不好。

4.完全搅拌后,在牛油酱表面点缀几片香菜叶,周围撒上玉米片就可以享用了。
 
芝士脆片
 
材料:


切丝cheddar / mozarella cheese
黑芝麻
罗勒叶 (切碎)
 
做法
1.烤盘铺上烤纸。
2.放入12茶匙芝士丝。
3.洒上黑芝麻和切碎的罗勒叶
4.放入预热180'C的烤箱, 烤至金黄色。

It goes well with most meats and as a dip for tortillas (soft or hard flour tortillas and corn tortillas) or even potato chipsRecipes for guacamole vary a bit, but they all contain avocado. Additional ingredients normally include salt and lime or lemon juice. Sometimes a common Mexican food seasoning, cilantro, is added, as well as tomatoes, onions (both finely chopped) or salsa.

Ingredients :
3 Avocado
1/2 onion ( chopped )
2 chilis  ( de-seeded and chopped )
1 tomato  ( seeds removed & chopped )
1 lime
Some Cilantro leaves ( finely chopped )
2 teaspoon olive oil  ( optional )
Black pepper and salt
 
Method :
1. Cut avocados in half and de-seed it. Scoop out all flesh and put it in a large mixing bowl. Mash the scooped flesh with a fork .
 
2. Add the chopped onion chilis , tomato , cilantro leaves , lime juice and olive oil.
 
3. Then add in salt and black pepper to taste .
 
4. Decorate with some cilantro leaves and serve with corn chips .
 







Crispy cheese chips
 
Ingredients :
Grated cheddar or mozarella cheese
Black sesame
Chopped basil leaves

 
Method :
1.  Line the baking tray with baking paper .

2. Put 1 or 2 teaspoon of grated cheese into the baking tray .

3. Sprinkle some black sesame and chopped basil leaves .

4. Bake at 180c until golden brown .
